       The Fratelli Rossi family produces and markets
       Parmigiano Reggiano and Grana Padano
       cheeses carrying on the tradition of
       three generations of master cheese-
       makers since 1907.

    Parmigiano Reggiano
    Parmigiano Reggiano cheese has a very long tradition. Historical documents
    show that 800 years ago Parmigiano was already very similar to that
    produced today. For one kilogram of cheese, about 16 litres of raw cow’s milk
    is required. After 12 months of ripening, each and every cheese is inspected
    by the Consorzio Parmigiano-Reggiano and must meet high quality standards.
    It is unanimously considered to be The King of Cheese.

FRANCIA
      Products from Francia’s Italian sites, including
      the Mozzarella di Bufala Campana (Buffalo
      Mozzarella), are made in the province of Latina,
      south of Rome, in the Lazio Region.

      In particular, the protected designation of origin
      (PDO) and therefore the name “Mozzarella di
      Bufala Campana” is not only related to large
      areas of the Campania Region, but also to
      southern Lazio, northern Puglia and Molise.

      In particular, the buffalo milk that we source and
      process comes exclusively from farms located in
      the provinces of Latina, Frosinone and Rome.

AURICCHIO
        In the year 1977, at San Giuseppe Vesuviano
        (Naples), the Auricchio company was born. Its
        founder was Gennaro Auricchio, the creator of
        the special rennet which endows Auricchio
        provolone with that flavour which is unique in
        the whole world, Mr Gennaro Auricchio’s firm
        rapidly made a name for itself: already at the
        end of ‘800 it crossed the Ocean and landed in
        the USA, in Italian shops. Its reputation and
        size were increasing steadily so that Cremona’s
        production was added to Naples’ first dairy.
        Auricchio is the World Leader in the provolone
        market, and rank amongst the top Italian
        companies in the dairy products sector.

    The name AURICCHIO and the monogram “A with the
    anchor” identify all Provolone varieties Classico (spicy),
    Dolce, Giovane and Stravecchio.

  The origin of Perla cheeses comes from the
  pristine pastures of Piedmont, a north-
  western region of the Italian peninsula. It is
  the ideal place to breed sheep, goats and
  cows: fresh air and pure water, added to
  high-quality hay and cereals, create the best
  conditions in order to obtain an extraordinary
  milk for dairy working.

                                                              Bra Tenero is produced only in the narrow border of the
                                                              Cuneo province. It is made and matured according to the
                                                              techniques of the ancient cheese making traditions of this
                                                              area: this is the secret of a cheese with such unique features.

MAURI
        The authenticity of the Mauri cheese is
        guaranteed not only by the quality of milk in
        Lombardy, but also by the special ripening that
        benefits from another gift of the territory: the
        Lanche, the natural caves of Valsassina.

        In 1920, Emilio Mauri sensed that it could
        establish a modern company following the long
        tradition of cheese, which was ripened cheeses
        in Lanche where products got a unique and
        inimitable taste.

Blue Cheese
Gorgonzola is a veined Italian blue cheese, made from
unskimmed cow’s and/or goat’s milk. It can be buttery or

                                                          Scamorza is a cheese that melts very well. It can be white or
                                                          smoked. Typically fried and served with prosciutto, tomatoes
                                                          or mushrooms, etc. It is also nice in paninis or melted on
                                                          pizza. This is a Top Quality scamorza. The smoked variety is
                                                          naturally smoked unlike most other products on the market
                                                          which are smoked using liquid smoke.

Emmental Bavaria is a traditional, unpasteurised, hard
cheese made from cow’s milk. The aroma is sweet with tones
of fresh-cut hay. The flavour is fruity, with a tone of acidity.

The Ubriaco cheese has its origins in the country traditions
of the province of Treviso. The name “Ubriaco” in Italian
means “drunk” and it was related to the cheese because the
local dairymen used to wash and to impermeabilize the rind
with some marc, conferring a unique flavour to the cheese.
