TASTE IN HERITAGE
INCUNA invites to the XXIII Conference on Industrial Heritage a presence and heritage essence
from a multidisciplinary vision of agri-food heritage, biocultural heritage and landscape with the
title of Heritage with taste.

We are facing an important activity of our life in society, which forces us to prioritise the
conservation and valorisation of an essential heritage, material and immaterial testimony and
with a strong cultural expression, inserted in a social construct that makes up the humanised
landscapes with the knowledge and memory that they entail.

The agricultural, livestock or fishing activity, its know-how in the work and value chain in the
territory, makes it possible for us to have food through a process of production, elaboration,
transformation, commercialisation and in the development of a food chain that brings to our
homes indispensable elements for people's daily lives.

It is noted and argued in opinion and communication forums about the emptying of the
population in rural areas, at the same time as concern is expressed about climate change, the
need for sustainable development is insisted upon, and at the same time there is a growing
interest in ecology, spreading appreciation for gastronomy or for the taste of the flavours of
wines, oils, spices or various condiments, as well as a new interest in material culture and
landscape, which turns our eyes to the witnesses and cultures of work or the remaining memory
of the place.

Industrial, cultural and natural heritage, the landscape, the know-how and the work of our lands
and our people have become the subject of new perspectives and urgent actions to build the
future. We have become exquisite with an aroma, a perfume, a colour, a flavour, and meanwhile
the link between people and the territory is broken, ancestral knowledge gets lost and we forget
about the work and the conditions of existence and living of the people who make our current
ways of life possible.
Biocultural heritage is a concept to which we draw attention through this conference, it has
been brought to the forefront in these times of confinement, loss, fear and anguish. We are
living in a time that is leaving its mark on our lives and on our personal and collective history,
we are suffering and enduring times of health crisis provoked by Covid19 : from these difficult
times and experiences we must draw lessons and teachings in order to face an uncertain future.

One of the issues that has been confirmed is how essential it is to guarantee an activity such as
agri-food, in order to value the work, effort and sacrifice of the women and men in the
countryside and rural areas, who are part of a historical value chain in permanent evolution that
leaves a testimony of the memory, work and production in the food industries. At the same
time, it encourages a growing interest in social innovation, citizen participation and the
importance of the circular economy, of the rational use of natural resources, of reconciling the
necessary sustainable planning of rural areas with urban needs.

Through TASTE IN HERITAGE we will try to offer a multidisciplinary vision and consideration,
highlighting: the history and technologies in devices, artefacts and architectures; emotions in
the enjoyment of landscapes; flavours, gastronomy; emotions, aesthetics and admiration for the
simple and natural; good practices in their conservation and architectural and building reuse;
the memory of the place with its knowledge and chores; lifestyles and work cultures; the
didactics and teaching of work and days in rural areas and primary activities; in the urban needs
that depend on them; in the importance of climate change and sustainability for heritage
conservation; the multiple stories that lead us to circuits and routes through the industrial agri-
food heritage all over the world.

The conference has different thematic sections, with two transversal panels and four sessions
where the papers and communications are presented.

They are organised as a "hybrid" proposal with a face-to-face part and a virtual part, using
computer platforms that allow interactivity and simultaneity of the congress sessions. All of this
is done in streaming, allowing participants, speakers and registered participants to intervene
and follow all the presentations, and at the same time have access to the conferences either live
or recorded.

The rules, processes and capacity are carried out in compliance with health safety regulations
and the necessary prudence, so that participants can enjoy the different activities of the
congress: conferences, film sessions, exhibitions, visits and routes through heritage sites and
actively share this broad compendium of research, experiences and proposals that enhance a
forgotten heritage, but fundamental in our daily lives. TASTE IN HERITAGE.

A documentary that highlights the value of Andalusia's industrial architectural heritage, through the example of
the La Trinidad Glass Factory in Seville, founded in 1902. The importance of the Fábrica de Vidrio La Trinidad
transcends the physical concept of architecture, as it was structured as a self-sufficient cooperative since 1934 and
was a model of social economy and the industrialisation process in Andalusia.

In January 2017, the director learned of the existence of 400 windmills in Odenwald, the fate of
which seems uncertain and makes its citizens feel insecure about it. This prompted him to travel
to other regions of Germany where there is more experience on the subject.

Lusatia is a rich region in eastern Germany where there have been coal mines for more than a
    hundred years. These activities have transformed a vast forest into large areas of lunar
landscape, covered with brown craters. Despite this, something impressive has happened: the
wolf has returned to Lusatia in the year 2000, although official data confirms that the last one
                                       was killed in 1845.

In this documentary, Hartmut Bitomsky uses archive footage to analyse how certain - seemingly
innocuous - concepts were used by the regime to subtly spread its ideology. Aspects such as
work, industry, production or leisure time are explored through different fragments as agents
of indoctrination through the newly born sound film.

Film historian Christian Franco Torre talks to film director Samu Fuentes about the feature film
he is shooting in Picos de Europa.
Fernando (71) and Manolo Mier (70) are brothers, two of the last remaining shepherds in Picos
de Europa. They transmit, with an unusual generosity, wisdom and happiness in equal parts. In
an environment where many would not be able to survive, they enjoy life.

Itinerary through the Industrial Heritage and Landscape of Asturias

08:45 h.

Departure from Gijón by bus, guided tour in Carreño through the hórreos and traditional forms
of elevated architecture. Explanation of the "Tentemoz@s" programme by local guides and
Fernando Mora, director of the Association of Friends of the Hórreos of Asturias.

After visiting different places of the Asturian cultural and natural landscape, we will go to Asiegu
(Cabrales). A tour and a guided visit by Javier Niembro to his agricultural and livestock farm.
Asiegu has received the award of Exemplary Village of Asturias 2019, by the Princess of Asturias
Foundation.

Javier Niembro and his team will give us an account of the development of their integral project,
both the cheese dairy and the model of activities and ways of seeing and understanding life
integrated into the natural and human landscape of the “Picos de Europa”.

An evaluation of the gastronomic heritage of the area will be carried out and the tour will
continue with visits to the cultural, industrial and natural heritage of Asturias.

The day will culminate with a visit to the magnificent natural setting of the Ardines Cave at the
Tito Bustillo Cave Art Centre, Ribadesella, where there will be a "Musical Poeisaje", guitar music
on images of the heritage of the councils visited, performed by the guitarist Montserrat Ardèvol.
This activity is part of the International Year of Caves and Karst 2021, organised by the
International Union of Speleology, with the aim of disseminating the importance of these
formations for natural and cultural heritage around the world.

Arrival in Gijón is scheduled for 22:30.

The visits and activities will be carried out in accordance with the health regulations, social
distance and permitted capacity, complying with all the provisions in force.

MEETINGS / WEBINARS - INCUNA 2021
                             "TASTE IN HERITAGE"

During the year 2021 different thematic webinars or seminars are being developed linked to the
INCUNA Conference itself. These activities have a special design with thematic sessions on the
same day, with the participation of speakers and specialists from different countries, and can be
followed through the INCUNA YouTube Channel.

One of their characteristics is that they are organised by Universities, Institutions or civil
societies, in collaboration with INCUNA, from different parts of the world, forming part of the
global thematic project called "Heritage with Taste". In this way, the Conferences are seasonally
adjusted, not only focusing their activity on the last week of September, but also working as a
"network" throughout a good part of the year. The conclusions of these webinars will be
presented by their coordinators during the 23rd International Conference on Industrial Heritage.

The first of these took place on 30 April 2021. It dealt with "Coffee" and was coordinated by
André Argollo Ferrao from the "Projeto Arquitetura do Café", CEPAGRI-UNICAMP, from the
University of Campinas in Brazil and the UNESCO Chair in Colombia.

The second webinar entitled "Agri-food Heritage in Portugal, memories of work and
production", was organised by the Universidade Nova de Lisboa and INCUNA, coordinated by
Professors Maria Fernanda Rollo and Susana Domingues, held on 18 June 2021.

The third webinar, entitled "Circular Territories", was held by the University of Hannover. It was
coordinated by Professors Jörg Schröder and Federica Scaffidi, organised by Leibniz Universität
Hannover and INCUNA, and was held on 5 July 2021.

The next webinar will be "Sugar and its itineraries", organised by the University of Granada and
INCUNA, coordinated by the architects Juan Domingo Santos and Carmen Moreno. It is
scheduled for 23 September 2021, at 16:30, and will be broadcast from the "San Isidro" sugar
mill in Granada.

The last webinar will deal with "Cider, its intangible heritage and gastronomy in Asturias", its
coordinator is Luis Benito García, director of the Cider Chair of the University of Oviedo, with
the participation of experts and managers of Institutions and associations of the sector. It will
be organised by INCUNA and will take place in the fourth quarter of 2021.

The interventions or presentations of these "meetings" will be published in the book of
proceedings, volume 25 of "Los ojos de la memoria", in the framework of the book that INCUNA
usually publishes every year in the aforementioned collection.
