                                   How to Cook
Fire up your BBQ to HOT or if you are using charcoal, allow the
coals to glow white for around 20 minutes.
Place the lamb over the hot coals fat side up, you will want to
cook the lamb this way up for around 15 mins. Make sure to
move it on a regular basis to get a nice dark colour to it.

Turn the lamb over to fat side down. At this stage you will want
to be careful as there is a risk of flare up from the fat melting,
keep your eye on it and move the lamb accordingly.

Give the lamb a further 15 minutes cooking fat side down.

Remove the lamb from the fire, place on a plate and allow to
rest for at least 15 minutes

If you are cooking indoors, follow the same process as above
using a heavy based frying pan. Allow this to get really hot so
you can achieve the desired char.

Thinly slice, and serve on a sharing platter
