WINE PHILOSOPHY
The first time I heard a sommelier trying to describe minerality in wine, I was
captivated. ‘Have you ever licked a pebble?’ How could a beverage encompass these
elements? The sensory link between aromas, tastes and imagination became an
ongoing pursuit, looking further and deeper into the world of wine to find those that
bring memories to life or transport me through synaesthesia of flavours. It’s a pursuit
I’ve been unable to put the brakes on for the last decade.
The list that follows will feature a revolving selection of showcases to highlight
producers from around the world who are unique, special, or simply close to my
heart. Great wine is subjective, your favourite is personal, and we’re only here to

PATRICK PIUZE
When he was a newcomer on the scene, Patrick Piuze struggled to buy both fruit, and had to push against the
grain to achieve the position in Burgundy he now holds – one of prestige and recognition. Amongst many bottlings, he
is known for individual terroirs from the same classification, marrying geographic versatility with winemaking
fortitude, and the resulting wines are intense. His purpose is to continually define terroir, and his wines are some of the

The first time I tasted Clemens Busch Riesling I was blown away by the marriage between raw power
and the subtle finesse. The wines have a tremendous length in minerality and a distinct sense of terroir. Family
owned, small production, committed to gentle treatment, sustainable practices and biodynamics, anti-
commercial and simply stunning. Wines are bottled based on the different parcels of slate within their

EMMERICH KNOLL
Emmerich Knoll (pronounced with a K) is an ethereal producer of Austrian wine. His Gruner Veltliner once
beat a line-up of Grand Cru white Burgundy, cementing a place in the hierarchy of revered wine. Exemplified by
length of minerality, vegetal notes and a rich mouth-filling palate weight, the world of Austrian Gruner is a quest
generously rewarded to those who seek it. These wines, somewhere between the freshness of Riesling, the
aromatics of Pinot Gris and the finesse of a white Burgundy, are immense and provoking.

Peter and Ruth Althaus were cult stars of Bordeaux-style wines in Australia for 30 years. The Jurassic soils in
their Stoney vineyard, and the cool climate and low rainfall of Coal River Valley Tasmania, allowed them to produce
sophisticated and ‘old world’ wines that stand out in a league of their own. Coal River Valley’s oldest vineyard continues
to produce some of Australia’s finest wine, the Merlot has been a favourite of mine for many years, it is an outstanding
example of what this grape can do when it’s handled well. One of the best Australian Merlots out there. The good team

When John Kirk first planted his vines in Murrumbateman around Canberra in New South Wales during the
early 70’s, it took some time before his cool climate Shiraz became widely accepted into the market as a quality
contender. For me, drinking a bottle of the 2002 vintage in late 2009 marked one of my most memorable moments with
Australian shiraz. Australia’s most renowned grape - while often shining brightly from South Australia - need not
originate there to reach International potential. The Shiraz-Viognier from Australia Capital Territory’s Clonakilla is now
one of Australia’s most revered red wines, and rightly so.

Jim Barry envisioned a premium table wine at a time when no Australian wines were valued this high. Whilst
famous wines such as ‘Penfolds Grange’ and ‘Henschke Hill of Grace’ now command a high commercial value,
Barry’s The Armagh came from a little-known vineyard in the Clare Valley, a region not coined for high-end table
reds. His perseverance prevailed, the Armagh is now considered part of the tapestry of Australian shiraz. Today,
Sam and Peter Barry continue the family’s reputation for Clare Valley quality across many varietals, especially
with Riesling. The Armagh is best with age, allowing the ripe juicy fruit and lengthy tannins to integrate with

It is well known that Madame Lalou Bize-Leroy sits at the helm of some of the greatest domaines in Burgundy.
Initially a négociant for the Maison Leroy family, and with experience at Domaine de la Romanée-Conti on her
resume, the purchase of Domaine Charles Noëllat in Vosne-Romanée in 1988 allowed her to begin her own
Domaine. All her vineyards are completely biodynamic and organic, and they produce some of the most revered
wine in the world. “Wine is inspired from the cosmos, it tastes of the world itself”
DOMAINE DENIS BACHELET
Domaine Denis Bachelet is a small producer of Gevrey Chambertin, sometimes called the King of
Charmes-Chambertin. His tiny parcel sits side by side with Dugat-Py, Roty, Raphet and Perrot-Minot, and in his
words is the best part of Charmes-Chambertin. “La finesse avant tout” – finesse before all things. Most of the
work is done in the vineyard, and the wines are then made with minimal new oak, un-fined and unfiltered,
producing a rustic yet delicate style, altering the natural hue of the grapes as little as possible.BORDEAUX
