Has anyone ever told you that barbecue is
all about science? Specifically: Consistency,
control and technology. Or at least that’s
the credo of the creators of the Pit Pal BBQ App
(free, iOS and Android) a free tool designed to help
grillers create consistently awesome barbecue.
The app is a dream for lovers of data and stats, allowing you
to track temperatures of various meats over the span of a

BBQ Recipes
something to satisfy every guest
BEER CAN CHICKEN
INGREDIENTS:
- 1 whole chicken
- 2 tablespoons vegetable oil
- 2 tablespoons salt
- 1 teaspoon black pepper
- 3 tablespoons of your favourite dry spice rub
- 1 can beer (we prefer Speights)
DIRECTIONS:
Remove neck and giblets from chicken and discard. Rinse chicken
inside and out, and pat dry with paper towels. Rub chicken lightly with
oil then rub inside and out with salt, pepper and dry rub. Set aside.
Open beer can and take several gulps. Place beer can on a solid surface.
Grabbing a chicken leg in each hand, plunk the bird cavity over the beer
can. Transfer the bird-on-a-can to your BBQ and place in the centre of
the grate, balancing the bird on its 2 legs and the can like a tripod.
Cook the chicken over medium-high, indirect heat (i.e. no coals or burners
on directly under the bird), with the BBQ cover on, for approximately
1 1/4 hours until the thigh juice runs clear when stabbed with a sharp
knife. Remove from BBQ and let rest for 10 minutes before carving.
BEST EVER HOMEMADE BBQ SAUCE
INGREDIENTS:
- Gluten free - 1 tbsp Garlic
- 1/2 tsp Garlic powder - 1/2 tsp Onion powder
- 1/4 cup Honey - 1 1/4 cup Ketchup
- 1/3 cup Molasses - 1 tsp Mustard, dry
- 1 tbsp Worcestershire sauce - 3/4 cup Brown sugar
- 1/8 tsp Cayenne pepper - 1 tsp Salt
- Oils & Vinegars - 4 tbsp Apple cider vinegar
DIRECTIONS:
Combine all ingredients in a medium sauce pan and stir well.
Bring to a boil over medium high heat and then turn the heat down
to medium low and simmer for 20 minutes, stirring constantly.

These tasty bacon meatball treats are the perfect way to spice up any barbecue
INGREDIENTS:
- 2 yellow onions - 1 lb. ground beef
- 1/4 cup onions, diced - 1/4 cup parsley, chopped
- 1/4 cup mushrooms, chopped - 1 Tbsp. brown sugar
- 1 Tbsp. spicy ketchup - 1 tsp. soy sauce
- 1 tsp. worcestershire sauce - 1/4 cup Panko bread crumbs
- 1 pack of bacon - 1 bottle of BBQ sauce
DIRECTIONS:
Cut off the tops and bottoms of the onions and remove the
exterior skin. Cut the onion in half and peel the layers apart,
keeping the biggest layers to stuff with meat.
Setting the onion layers aside, mix the ground beef, diced
onion, parsley, mushroom, brown sugar, condiments, and
bread crumbs in a large mixing bowl by hand.
Place a handful of the meatloaf mixture inside two of the onion layer pieces.
Wrap the onion meatballs in bacon, using three slices per ball. Secure
the bacon with toothpicks to keep it from unraveling during cooking.
Bake in a dish on a closed BBQ 40 minutes. Cover the balls
in BBQ sauce and bake for an additional 5 minutes.
