Bar del Borgo, Bagnaia (in the Italian province of Viterbo),
September. After a walk in Villa Lante we head to the
small central piazza to see if we can catch the late end of
Sunday lunch. The kitchen is about to close at 2:30 pm;
still we are encouraged to take our time and order from
the full menu. We choose a house-made fava puree soup
and local white wine from the Tiber River Valley. To our
delight, our waitress serves us a giant bowl of soup with
rustic bread. Its light crumb and airy texture let us know
that the baker took the time to use a slow-rising dough
and artisanal baking technique. Dipping the bread in our
soup and sipping our Trebbiano-based wine, we sigh at this
RITROVO®-est of moments.
When we return home, such lunches are most often prepared in our own home, especially if we want to
recapture the leisurely pace and quality raw materials of the Italian Sunday lunch. RITROVO® continues to
embody the type of food we eat in Italy, with a distinct recognition of using the best of what is local. On a recent
Sunday in the U.S., for instance, we cooked up a mix of local chard, dandelion and kale, tossed it with garlic and
Casina Rossa Sea & Salt and made a green “ragu". When we served this over our new gluten-free, sustainably
packaged spirulina pasta by Pasta Natura it made a perfect vegetarian lunch. A Washington State viognier white
wine took the place of Bagnaia’s Trebbiano.
As we reflect on our 20th year we are grateful for our strong customer connections. We look forward to new
customer and partner collaborations while cherishing existing ones. Heading into RITROVO®’s third decade, we
continue to clearly communicate the mission of RITROVO® here stateside.
Highlights from this year and next include:
• A spring Italian appetizer class at Baker & Olive in Encinitas, California created a buzz as we
introduced the concept of vegetable carpaccios and a simple Ligurian Vegetable appetizer as first courses.
• Local Seattle customers were heartened to see us at the West Seattle Thriftway’s Mediterranean Days,
serving classic products like RITROVO SELECTIONS™ Aged Balsamic and Trampetti Extra Virgin
Olive Oil.
• RITROVO® participated in the Cheese Plus harvest festival with two of our joint venture products:
RITROVO® Truffle & Salt & Cheese Potato Chips by Morgan Handmade Provisions and RITROVO®
Truffle & Salt Almonds by Ricchuiti Family Farms.
• With this catalog, we introduce a new venture: Lily Pops Truffle & Salt Lotus Pops, a project borne out
of our weekly trips to the Little Italy Farmer’s Market in San Diego.
• Our “finding” of Cacao Crudo, Italy’s only Bean-to-Bar Raw Cacao Chocolate, at the SANA show in
September 2019, featured here in our 2020 catalog for the first time in the US.
While we continue to eat the RITROVO® way, we grow and evolve along with our customers. We invite you to
enjoy our new 2020 catalog, complete with some exciting new offerings, new partnerships, and new approaches.
