The Head Office in Canada is located in Mississauga Ontario, along with our state of the

Bakery Mix Plants
In our Bakery Mix facility, we manufacture a wide variety of Bakery Mixes and Bases for
many products found in today’s Bakeries and Pastry Shops. From Yeast Donut to Cake
Donut, Danish, Sweet Dough, Cakes, Cones, Cookies, Muffins, Breads, Pizza, Bagels, and
Pancakes. We also develop custom/private label formulations for many of our customers.
Service & Experience
At ADM we are quite proud that the majority of our key people in the Bakery Mix Business
are from a Baking background. This results in a collective of technical, practical and creative
experience of more than 200 years. We believe this allows us to interact with our customers
in a highly effective manner for understanding and accommodating their needs.

HARD SPRING WHEAT PRODUCTS
TOP PATENT FLOUR
Bakers Roses is ADM’s brand of top patent flour. It is bright and white in colour and
is treated for all-purpose baking. This flour is strong enough to produce superb rolls
and buns, yet soft enough for cakes and pastries, biscuits and chemically leavened
goods. This product is available with regular treatment (Bakers Roses), unbleached
with a natural creamy yellow colour (Purity) or with double bleach (Bilroy) where an
especially white flour is needed (e.g. Chinese noodles and egg roll skins).
FARINA OR SPRING WHEAT SEMOLINA
Golden King Wheatlets are fine granulation wheatlets suitable for making pasta,
semolina breads and for dusting.
Monarch Wheatlets are coarser in granulation and are used for breakfast cereal and
for dusting.
STRONG BAKERS’ FLOURS
These flours are stronger than top patent, but the colour is typically less white than
Bakers Roses. Several types of Strong Bakers’ flour are available with varying levels
of strength and amounts of maturing agents.
HARVEST QUEEN FLOUR
A bleached bakery flour suitable for use in pan and variety breads, soft and hard
rolls and sweet dough. The oxidation on Harvest Queen is designed for good
performance in straight-time to sponge-dough baking processes.
THREE STARS SB
An unbleached version of Harvest Queen. It is the flour to choose where a creamy
yellow colour is desired.
TRIUMPH FLOUR AND ZF PLUS
For short or no-time dough baking systems ADM’s Triumph and ZF Plus are the
flours of choice. These flours eliminate the need for additional dough treatments in
the bakery. Triumph works well in shops with good mixing capabilities. For
bakeshops with slower speed mixers ZF Plus flour has superior performance.
Triumph and ZF Plus flours are used for white bread and variety breads and rolls.
PERFECTION FLOUR
A higher protein, stronger flour. It is suitable for specialty bread production where
extra strength is needed and crumb colour is not required to be bright white.
Perfection is great for hearth breads and buns.
HICKORY FLOUR
ADM’s extra strong first clear flour. For bakeries producing rye breads, multigrain
breads and other heavy specialty breads the extra strength of Hickory gives good

WHOLE WHEAT FLOUR
ADM offers a range of whole-wheat flours varying in granulation. You can tailor the
appearance of your finished products by choosing from our range of whole-wheat
flours.
• HiRise Whole Wheat is fine in granulation
• Special Whole Wheat is medium in granulation
• Knighthood Whole Wheat contains bran of very large flake size.
• Stone Ground Whole Wheat is milled entirely on a traditional stone mill and
contains no additives.

MONARCH SPECIAL CAKE
Monarch Special Cake is a bleached cake flour of very fine granulation. It is used in
high sugar ratio cakes and sponge cakes.
MONARCH PASTRY
Monarch Pastry Flour is a bleached all-purpose cake and pastry flour. It is used in-
low ratio cakes and pastries, pie dough, etc.
GLENROSE PASTRY FLOUR
Glenrose is an unbleached pastry flour that is used in cookie, biscuits, pie dough,
waffles, batters, pastries, etc.
RYE PRODUCTS
ADM’s rye flours and meals are the choice for rye bread and roll production. A large
range of products are available. Use them to add taste and texture appeal to your
rye bread, rolls, and bagels
