     IN CONVERSATION WITH CHEF VIK
Recently promoted to Chef de Cuisine for The Padang, SCC’s signature restaurant,
we spoke to Chef Vik about his journey as a culinary master.

Why did you decide to become a Chef?
I started off stewarding and working as a kitchen helper in
the hotel industry at a young age of 16 years. Over time,
I realized that my fascination for cooking grew stronger
and I enjoyed watching cooking shows and learning new
cooking techniques.
I was mentored by celebrity chef, Emmanuel Stroobant,
and landed my first job in 2009 as Chef de Partie under
his mentorship. Since then, I have been on a continuous
quest to improve upon my recipes and learn as much as
I can.

Tell us about your journey as a Chef with SCC.
It was a different environment for me when I first started
off in SCC. For me, having a good team and establishing
a standard way of preparing menu items are essential
in this industry. I prefer to lead a team by being on
the ground with them and I guide them to ensure that
the proper cooking techniques and plating process is
followed through.
This is important to ensure that Members receive the
same or even, better dining experience with The Padang
Restaurant. I am thankful to the management for their
strong support and for trusting the vision I have for the
restaurant.

What is your favorite cuisine to cook?
I enjoy cooking French and modern European cuisines,
mainly because of my past experience dealing with more
intricate recipes.

How do you get your inspiration?
I think that the people we work closely with play a huge
role in motivating us. This is something I picked up
from my mentor. Leadership is an important factor in
inspiration.

What’s your favourite dish on the menu and why?
Do you think you can further innovate the menu?
The Scallops!
Definitely but I would like to focus on the modern
To be honest, when I first started as a Chef with SCC, European cuisine instead of the Asian varieties because

Building Friendships
SCC RECIPROCAL CLUBS:

						Through Sports
Sports has a most wonderful way of bringing people together. The SCC helps make it easier for its Members to
establish contact and facilitate the building of relationships through visits, tours and sports tournaments with its
reciprocal clubs around the world.
At the recent Soccer7’s, we caught up with Members from two of SCC’s reciprocal clubs where football teams have
been participating in the tournament for many years now - the Royal Bangkok Sports Club (RBSC) from Thailand and
the Yokohama Country and Athletic Club (YCAC) from Japan – and asked what has motivated them to return to the
SCC each year.

Ever since we participated back in 2009, the SCC
Soccer Tournament itself has improved a lot in terms of
the quality of the teams that participate, the hospitality
and management, and the people working behind the
curtains.
It has really offered us a lot of pleasure and joy for the
game we love; it is fantastic to be able to play right in
the centre of the Padang, the heart of the beautiful city
of Singapore.
We would like to be invited once again, we really
appreciate the warm hospitality we get to enjoy from the
Club and the Members and staff; we appreciate every
single minute of it.

Joe Takeda - Yokohama Country and Athletic Club (YCAC)
YCAC was honoured at the Soccer7’s Gala Dinner for 10 straight
years of participation in the SCC Soccer Tournaments since 2009.

The first time I came to Singapore to represent RBSC at the SCC Soccer Tournament was in 1998. Since then,
I’ve returned 10 times, and I see myself continuing to visit SCC to play, upgrading from the Open category to the
Legends category.
Singapore is a nice place to visit, and it is a great feeling to be able to play on the pitch in the middle of the city.
Whenever we come, we enjoy ourselves as a team, and it is also a chance for us to meet old friends. We’ve made
many friends with other teams who participate regularly in the Tournament over the years - YCAC is a good friends
of ours, and of course SCC is always good to us.

Our objectives: GCB and GC for their support for the event.

• Raise awareness of the facilities available, especially
the Pool Table which was recently installed and
offered free of charge for members’ play.
• Create an opportunity for SCC Members to socialize
   and bonding.

At 11am, we started our first game between the Squash
and the Billiards and Snooker Sections and hopefully the
beginning of a new tradition in SCC. While the friendly
tournament progressed, free flow of beers and light
snack were served.

During the first round of the Knock Out format, players
were to play to the end of the frame as for some, this
was their first experience in Snookers and Pool. After the
first round, a time limit of 20 minutes was imposed and
there was some fierce competitiveness especially from
the Golf, Cricket, Lawn Bowl and Squash Sections.

By 5pm, our finalist emerged: Golf Section who
qualified from the winner pool and Cricket Section
qualified from the loser pool. Golf Section emerged
Winner with a 3-0 victory in the final and became the
first winner of the inaugural SCC Intersection Cuesports
tournament 2018. Golf Section won the Challenge
Trophy and $300 F&B Voucher, while the Cricket Section
won a $150 F&B Voucher. There was a good spread of
buffet dinner for all participants after the event which ran
into the late evening together with the free flow of beers.

I hope all participants enjoyed the one-day event; we
certainly achieved our objectives. Our next event will be
the Coaching Clinic in September, and we invite you to
register your interest with the Marker.

IN-HOUSE BALUT POINTS TABLE
The Balut section had another very successful In-house Balut event on July 24th with 33 participants, great
makan – especially the lamb stew, and the usual wonderfully convivial crowd. At what is approximately the half-way
mark, we can see the “race” for “Baluteer of the Year” is hotly contested. While a mere 230 points or so separates the
current ‘top three’, the situation can dramatically alter as we move towards December.

So far this year we have had a total of 8 in-house events, mainly on Tuesday evenings, but occasionally on
Saturday afternoons. These events continue to be extremely popular. If any Club members are considering to join, but

that experience is not necessary as we will be very happy to teach you!

SINGAPORE INTER-CLUB LEAGUE
The League season runs from May for six months,
culminating in the final game which will be hosted by
SCC in October. The most recent league match was
hosted at NUSS’s Suntec City facility on July 18. As
usual there was great hospitality, and excellent makan –
possibly a reason why some of our players were not as
“sharp” as usual!

Looking on the brighter side, there are still 4 games to go and
plenty of opportunity to retain the League Trophy.

THE TRIANGULAR TOURNAMENT
This is an annual event played between the SCC,
Indian Association, and the NUSS. As the Tournament
winners last year, NUSS hosted this year’s match at their

“best* practices*” spurred on by the renowned SCC hos- balls. It was Sat XI’s right arm quick, Simon Bird who put
pitality, which surely resulted in many a late night and in a solid round to win the competition. A great day out for

However, being the consummate enthusiasts we all are,
22 were present and correct for the Interport Match on
Sunday and SCC cunningly chose to invite our guests to
have first use of what looked a very good Padang strip.
RSC lost their opening bat on the 2nd ball of the innings,
but powered by former Malaysian Capt Rohan Selva-
ratnam 35* (38) and Navin Durairatnam (35* (34) they
recovered with a 75 run 2nd wicket stand. From there our
bowlers managed to pull things back to restrict RSC to a
mere 160 from their 30 overs - when at one stage 220+
looked likely.

Chasing a small target had banana peel written all over
it, but the SCC top 4 got the job done. A rollicking start
saw SCC pile on 84 - 1 in the first 10 overs - Pankaj
Kapoor 35* (26) and Syed Ali 37* (16!) and from there the
Interport Honours were sewn up in 24.3 overs for the loss
of 2. We look forward to the return fixture in KL next year.

At the time of writing this, our league performance has
been pretty good with our top two teams leading the
charge. While Lions, stepping into the T20 mode, has
been undefeated so far; Tigers & Jaguars almost have
one hand on the Div 1 and Div 4 silverware with some From left: The winning squad at the Soccer7’s. / Section Members at the

The Darts Section has had an active couple of months, and we are pleased to share with you some of the highlights.

MONTHLY DARTS NIGHT
We had our monthly Darts gathering at the Men’s Bar on
14 June 2018. As usual we had a boisterous evening of
darts, food and drinks. Our monthly Darts event, usually
held on the second Thursday of each month, is also time
for Section Members to socialise and get into the mood
for the weekend.

LADIES DARTS NIGHT
The eagerly awaited Ladies Darts Night held on
21st June 2018 did not disappoint! We had about 40
participants with the ladies taking centre stage with darts
in hand competing for the honours. The generous spread
of food, not to mention free flow of drinks, ensured all had
a fun-filled evening which is what darting is all about. The
darts committee also organised generous gift bags for all
participants together with specially designed T-shirts.

The top 3 teams were awarded an assortment of cash
vouchers, wine and SCC souvenirs
1st: Shelia, Mahesh and Andrea
2nd: Fathima, Fatema, and Serene
3rd: Fahmida, Louisa, and Bindu
Top Scorer: Fatema Sadiq

The evening was also well-attended by the men of the
Darts Section, and a big thank you for their help with the
chalking and scoring. Our Captain Charles closed the
night with some live music!

We thank the GC members Zoher Motiwalla, Anwar
Gaffoor and Mohietheen Fathima for their presence and
Anwar Gaffor for presenting the prizes.

Finally, a big thank you to SCC, Fathima, Kelvin,
Genevieve, Atos Wellness, Body Wellness, Nutrifirst, and
the Darts Section for arranging and providing the prizes.

COMING UP
We will be hosting the Darts Intersection event on
Saturday 18 August. By the time of publication of this
issue, a record 18 teams will have enjoyed this annual
exciting afternoon of darts and dinner.

 GOLFERS CORNER @ MEN’S BAR
Thanks to SCC President Sher Baljit Singh, Deputy President Zoher Motiwalla, Chairman GCB Matthew
Streeton, and members of the General Committee, the Golf Section now has a “Golfers Corner” and a wall of fame
at the Men’s Bar. This is the epitome of our treasured SCC Sports culture where every Sports Section is equally
 honored and supported.

The Golfers Corner captures our remarkable past glory, honors our Golf Champions and keeps alive the
Golf Section’s never-say-die spirit while setting a dynamic mission standard for the future.

The Golf Section was established in 1984 and is arguably the largest sports section in the Club which
offers Members a full year calendar of competitive and social golf games at both local and overseas golf
courses. In addition we host a quarterly social night with excellent F&B and a live band, a shotgun start Annual
Golf Championship and a sell-out Christmas Social Golf game with a smashing after-game Christmas Party Bash
 at the Padang Restaurant.
