Baked Okra
Ingredients
   1 bag of frozen,
    cut okra
   2 Tbsp. cornmeal
   3 Tbsp. panko
    breadcrumbs

Citrus Squash Casserole
Ingredients
   Cooking spray
   3 -12 oz. boxes
    of frozen winter
    squash
   2 Tbsp. orange
    juice
                              Directions

Creamy Garlic Mashed Potatoes
Ingredients
   1½ pounds red
    potatoes
    (unpeeled and

Deviled Eggs
Ingredients
   12 large eggs
   3 Tbsp. plain
    or Greek
    low-fat yogurt
   3 tsp. mustard
                              Directions
   1 garlic clove,
                              1. Place eggs in saucepan large enough to hold
    crushed                   them in a single layer. Add cold water to cover

                              3. Peel the eggs and slice each egg in half,

                              4. Gently remove the yolks and place them in a

                              yolks and add mustard, yogurt, crushed garlic
                              and season with salt and pepper.
                              5. Spoon egg yolk mixture into the egg white
                              halves and serve.

Homemade Cranberry Sauce
Ingredients
   1 bag (12 oz.)
    fresh
    cranberries (or
    frozen
    cranberries,
    thawed)

   1 cup sugar or

Matzo Ball Soup
Ingredients
   8 cups chicken stock*
   4 eggs
   ¼ cup canola oil
   ½ tsp. salt
   1 cup matzo meal
   2 carrots (sliced)               Directions
                                     For Chicken Stock:
   3 celery stalks (sliced)
                                     1. Roughly chop celery, carrots, parsnip, and onion.
   2 tsp. dill (chopped)
                                     2. In a large pot, combine chicken carcass, vegetables, salt,

                                     3. Bring mixture to a boil and then reduce to a simmer.

                                     4. Meanwhile, with wet hands, form matzo mixture into 12
                                        balls. Use about 2 Tbsp. of mixture for each ball.
                                     5. When chicken stock comes to a boil, drop matzo balls into
                                        pot and reduce to a very low simmer.

Pulled Brisket Sliders

Ingredients
   Non-stick
    cooking spray
   4 pounds beef
    brisket
   2 cans onion
    soup                   Directions
   2 large onions         1. Preheat oven to 350°F. Coat a large
    (thinly sliced)        roasting pan with non-stick cooking
                           spray.
   12 small whole
    wheat rolls            2. Place brisket in pan, then pour onion
    (sliced in half)       soup over the brisket and top with
                           sliced onions.
   Aluminum foil
                           3. Cover pan tightly with aluminum foil
                           and bake for 3½ - 4 hours or until meat
                           is fork-tender.
                           4. Place brisket on a cutting board and
                           shred with two forks. Then return bris-
                           ket to the pan, mix well, and serve on
                           slider rolls.

Roasted Garlic and Lemon Green Beans

Ingredients
   1 pound fresh
    green beans
    (trimmed) or
    frozen green
    beans
    (thawed)
                                Directions
   1 Tbsp. olive
                                1. Preheat oven to 400°F.

                                2. In a 9x13-inch baking dish, stir

Simple Snicker Doodles
Ingredients
   ¾ cup whole
    wheat flour
   ¼ tsp. baking
    soda
   ½ tsp. ground
    cinnamon
                               Directions
   1 Tbsp. pure
                               1. Preheat oven to 350°F.
    maple syrup
                               2. Place the flour, baking soda, and cinnamon into a
   2 Tbsp. cashew             mixing bowl and stir to combine. Then, add maple

Spiced Carrots
Ingredients
   1 Tbsp. olive oil
   4 cloves garlic
    (minced)
   2 tsp. paprika
   1 tsp. ground

Zucchini-Potato Latkes with Tzatziki

Ingredients
   1 pound zucchini
    (shredded)
   2 cups shredded,
    cooked potato
   2 medium shallots
    (minced and divided)
   1 egg (beaten)
                                    Directions
   2 cups whole-wheat
    breadcrumbs                     1. Preheat oven to 450°F and coat a baking sheet with
                                    cooking spray.
   ½ cup crumbled
    reduced-fat feta                2. Toss zucchini, potato, 3 Tbsp. shallot, and egg in a
    cheese                          large bowl. Add breadcrumbs, feta, 1 Tbsp. dill, ¼ tsp.

Pumpkin Pie Spiced Pecans
Ingredients
   2 Tbsp. sugar
    or sugar
    substitute
   1 tsp. pumpkin
    pie spice
   ½ tsp. salt              Directions

                             Set mixture aside.

Apple Ornaments

Cheerio Christmas Tree

    Nut Cheerios®
   6 Tbsp. butter
   4½ cups mini
    marshmallows
                                Directions
   Green food
    coloring                    1. Line a cookie sheet with waxed paper.
                                2. Place the butter and marshmallows in a sauce-
   Red cinnamon                pan. Heat over low heat, stirring    constantly,

                                3. Stir in the food coloring until the mixture is
                                evenly colored.

Santa Strawberries
Ingredients
   1 pound large
    strawberries
   1 (8oz.)

                                1. Rinse strawberries and cut off all of the

                             snowman to hold all the pieces together.

                             middle cube of the snowman for arms.
