CUISINE
Today’s South African cuisine is the result of a blend of
influences from nearly every part of the world. Traditional
African dishes have evolved along with Indian and European
cooking to create a vibrant variety of tastes for the inquisitive
traveler. Beef, pork, and chicken are the basis of most main
dishes, with occasional opportunities to try indigenous
meats like farm-raised springbok (a game meat similar to
venison). Seafood may also be available, especially along
the coast. From dinner at an award-winning restaurant
in Cape Town to festive meals in the lodge boma, great
cuisine is an essential part of the experience when traveling
in South Africa.
Please inform us of specific dietary restrictions by

questions about our ability to meet your needs.

TRANSPORTATION

OUR GUIDES
With a Boundless Journeys guide, your experience is that of friend and local adventurer. We believe strongly in working with
local guides, experts in the areas to which we travel, and they hold the keys to unlocking the hidden delights of your chosen
destination. Although you will never know they are at work – the mark of a truly great leader – our guides make magical
things happen and add a dimension to your trip that you could not experience on your own.
Over the years we have forged bonds with some of the best guides in the world, and we typically work with a small team of
guides in each region. You will be informed of the guide for your trip one month prior to your departure. Following is just one
example of the excellent guides we work with in South Africa.

                                   MELISSA SUTHERLAND
A self-described global citizen, passionate Capetonian, and wine aficionado, Melissa
Sutherland hails from the Cape Winelands but lived for more than a decade in New York
and Sydney, Australia where she had a career in publishing and served as a Vice-Consul
for Political and Cultural Affairs during the early years of South Africa’s democracy.
Since 2008, she has focused on connecting people with the world of South African wine,
art, and travel. During the 2010 World Cup hosted by South Africa she was selected to
be a local storyteller as part of Cape Town Tourism’s ‘Beyond the 90 Minutes’ campaign.
Today, Melissa lives in Cape Town with her husband and two teenagers, and when not
writing or painting, enjoys nothing more than sharing the best of what South Africa has
to offer with well-travelled and discerning visitors.
