                              SECTION 7-14 – Hall Programme
                                             !
Conditions of Entry
ALL Entries to be lodged with the Secretary on the prescribed entry form. Waiver form to be
completed and monies paid by 6pm Wednesday 27th March 2019. Entries will be taken at the
Secretary’s Office, Wingham Show ground on the following days. MONDAY 25TH, TUESDAY 26TH
10am to 2pm & WEDNESDAY 27TH MARCH 8am to 6pm. No       late entries will be accepted.
Cut Flowers, Floral Art & Dahlias to be delivered no later than 9am Saturday 30th March 2019 and
Pot Plants to be delivered Thursday 28th March between 3pm and 6pm.
1.    All exhibitors must pay entry to the ground on Saturday & Sunday. All entries to be
      made at the Secretary’s office. No entries will be accepted at the Exhibition
Hall. Receipt of entries immediately before judging will be refused.
2.       No exhibit is to be taken into the Hall without a Competitor Ticket. All Hall exhibits
         are to be in position by the time stated at the commencement of each section and
         must have the Society’s class Ticket securely attached. Small safety pins on soft
         articles are allowed. Stewards will not be responsible if the cards become detached.
3.       The hall will be open from 8am Friday 29th for judging only
4.       No exhibit shall be removed from the hall until after 12md Sunday 31st March.
5.       The Exhibition Hall will be closed to the public between 10am & 12md on Friday
         whilst the Judging is in progress.
6.       All prize monies are to be collected from the Society on Sunday morning. Prize
         money over $75 will be subject to GST laws as stated on Entry form. Prize money
         not collected at the Show will be forfeited.
      7.         Any Exhibitor knowingly making false entries shall forfeit any prize which may
         have been        awarded and will render himself/herself liable to be disqualified from
         further competitions.
8.       Exhibits shall be owned, produced or manufactured by the Exhibitor. Joint entries by
         two or more persons is not permitted unless they form a bona fide partnership.
         Exemptions shall be clearly stated in schedule.
         Exhibits to be entered in one class only. No single entry is to form part of a
         collection
9.       All Exhibitors are reminded that whilst the committee will take every Precaution
         under the circumstances to ensure the safety of the article sent to the exhibition, yet,
         they wish to be distinctly understood that the onus is on the exhibitor and should
         any article be lost or stolen the committee will not be held responsible.
10.      The Committee reserves the right to alter, cancel or vary any class in this schedule
         or refuse an entry.                                                                   st
11.      The Most Successful
                     nd          Exhibitor will be determined on the Following Point Score – 1
         2 points; 2 1 point; Champion 2 points; Reserve Champion 1 point.
12.      To be eligible for the Most Successful Exhibitor there has to be a minimum of two
         exhibitors in a class for those points to be counted.
13.      All Exhibitors enter at their own risk and must sign a Waiver Form.
14.      The Judge’s decision will be final and no correspondence will be entered into.
15.      A Judge will not award a 1st Prize if the entry is not deemed to be of that standard.
16.       Any matter not covered in this schedule will be ruled on and adjudicated by the
          Chief Stewards.

HINTS
Vinegar reacts against metal lids – Coffee jars do not seal, Damp lids cause mould, a damp metho
cloth will shine outside of jars A small round sticker with the exhibitor number placed on the lid top
will ensure that the correct lid is replaced on your exhibit, jars must be full, jars must be clean – no
old sticky label residue, Consistency in fruit size, clear fruit colour –not cloudy, not too dark
(indicating boiled too long), jam/jellies to be set. Butter – consistency, yellow, doesn’t taste of egg.
Relishes -don’t taste floury. A slow and gentle heat used to cook the fruit/vegies before adding
sugar/vinegars/thickeners.

                                       RICH FRUIT CAKE
                                      Cooking Competition
Ingredients:
250gm (8oz) Sultanas
250gms(8oz) Currants
90gms(3oz) Chopped Red Glace Cherries
¼ cup Sherry or Brandy
250gms(8oz) Plain Flour
½ tsp Grated Nutmeg
½ tsp Vanilla Essence
4 Large eggs
250gms(8oz) Chopped Raisins
125gms(4oz) Chopped Mixed Peel
90gms(3oz) Chopped Blanched almonds
60gms(2oz) Self Raising Flour
½ tsp Ground Ginger
250gms(8oz) Butter
½ Tsp Lemon Essence or finely grated Lemon Rind
!Method:
Mix together all the fruit and nuts and sprinkle with the sherry or brandy.
Cover and leave at least 1 hour, but preferably overnight.
Sift flours and spices.
Cream butter and sugar with the essence.
Add the eggs, one at a time, beating well after each addition, then alternately add the fruit and flour
mixtures.
Mix thoroughly.
The mixture should be stiff enough to support a wooden spoon.
Place mixture into a prepared tin no larger than 20cm (8”) and bake in a slow oven for
approximately 3 ½ to 4 hours. Allow to cool in tin.
!It is suggested Raisins be snipped in 2 or 3 pieces. Cherries into 4 to 6 pieces. Almonds crosswise
 into 3 to 4 pieces.
