HISTORY OF GIN
Gin was created by Dr. Franciscus Sylvus, a Dutch
chemist, in the 16th Century as an attempt to
cleanse the blood of those suffering from kidney
disorders. Sylvus named his creation genievre,
French for juniper. Mass production of gin in
England soon followed as King William III used
his grudge against France to ban expensive liquor
imports from that country and made gin affordable
for the masses.

Quirky producer Hendricks make their
pot-still distilled gin using cucumber as one
of the primary botanicals. This makes for a
unique, tasty and incredibly refreshing gin.

A superb London Dry style gin which
is made at Blackwater Distillery in West
Waterford. Each batch is carefully made in

BLACKWATER WEXFORD

The strawberries for this gin were grown
just outside Enniscorthy, Co. Wexford. For
maximum flavour the strawberries are
distilled but even more are added before
bottling to enhance.

Created in the heart of London at the
Kennington distillery, Beefeater 24 is a
sophisticated blend of fine botanicals and

BOMBAY SAPPHIRE.... €6.00
Bombay Sapphire’s name derives from gin’s
popularity during the British Raj in India
and was developed to create a differentiated
brand from the more traditional London dry
gins. Bombay Sapphire opens with a touch of
juniper, a ripe citrus and hints of spice in the
fragrance.The palate is exceptionally smooth
and allows the botanicals to open up one by
one and mixed in the most lovely way with
juniper slightly at the fore front.

wheel and Fever Tree Aromatic Tonic.

A high quality gin is the first product
from a new distillery established in
Newtownmountkennedy, Co. Wicklow.
The final ingredients for Bonac 24 are
juniper, angelica root, cassia, coriander, star
anise, cardamom, cucumber, spearmint, pear,
lemon, bergamot, curacao which can all be
seen illustrated on the botanical bird which
appears on the label.
Recommended serve with a sprig of mint,
raspberries and a Fever Tree Mediterranean.

BROCKMANS....................... €7.50
An English gin, Brockmans is distilled in
a 100 year old traditional copper still and
made from a recipe of different botanicals;
juniper, blueberries, blackberries, cassia bark,
liquorice, lemon peel, coriander, angelica,
orange peel, almonds and orris.
Recommended serve with a garnish of pink
grapefruit and blueberry and a Fever Tree Spiced
Orange Ginger Ale.

DINGLE ORIGINAL........ €7.00
The Dingle Distillery is a small batch artisan
distillery. The gin is made in small batches
of 500 litres and would be categorised as a
London Dry Gin but has a unique character
and flavour. Botanicals used are local to
Kerry and include rowan berry, fuchsia, bog
myrtle, hawthorn and heather giving a fresh,
floral character that balances the juniper.
Recommended garnish of lime and a Fever Tree
Indian Tonic.

COPPERHEAD................... €7.00
Copperhead is a Belgian gin, made with
5 essential botanicals - angelica, juniper,

cardamom, orange peel and coriander seed.
The legend goes that Mr. Copperhead was a
notorious alchemist, in search of the elixir of
life who stumbled upon this recipe.
Recommended garnish orange and coriander,
3 drop bitters and a Fever Tree Spiced Orange
Ginger Ale.

D1 LONDON GIN................. €7.50
D1 gin is made by distilling neutral wheat
spirit in a copper pot still. Has an aroma of
clean fresh citrusy nose with subtle juniper,
fragrant coriander and believable notes of
freshly picked nettles and a taste of piney
juniper is more evident than on the nose
with well integrated citrus and coriander.
Complex and classically styled. The striking
image which adorns the bottle is “Floral
Skull”, by artist Jacky Tsai.
Recommended serve with garnish of blackcurrant
and mint with a Fever Tree Elderflower.

GLENDALOUGH............... €7.00

five friends from Wicklow and Dublin with

craft distilling in Ireland. Glendalough Wild
Botanical Gin brings you through the seasons

mind of PJ Rigney, Drumshanbo Gunpowder
Irish Gin is slow distilled by hand with
oriental botanicals and gunpowder tea at The
Shed Distillery in Drumshanbo, Co. Leitrim.
Delightfully fresh and rounded up front with
citrus and spicy notes immediately evident.
The expected juniper follows closely behind.
Gunpowder tea, meadowsweet and coriander
are all notable. The overall impression is of a
very well balanced and surprising gin.
Recommended serve with a wedge of pink
grapefruit and raspberries garnish and Fever Tree

HA’PENNY GIN................... €7.00
Named after the Ha’Penny Bridge which
joins the north and south side of Dublin city
across the river Liffey, which got its name from
the half penny toll to cross it. Ha’Penny Gin
is a gin made with the love and inspiration
from the Victorian walled gardens of the
Phoenix Park in Dublin. Using 13 of only
the best botanicals, including blackberries,
lavender, geranium and dandelion flowers
as well as traditional juniper and other well
known gin ingredients.
Recommended garnish is lemon and mint with a
Fever Tree Elderflower.

Jensen’s has been designed to replicate the
old-style London gins from the heyday of
the gin cocktail and is one of the only small
batch London Dry gins actually produced in
London. Bursting with juniper flavour, with
a luscious texture and aromatic bite, Jensen’s

revelatory mixing gin.

An unusual gin from the Black Forest in
Germany. Most people who have tried this
premium gin rate it as one of the best in the
world. Monkey 47 is made from 47 different
botanicals and is also bottled at 47% proof.
This exotic gin is made with a molasses
base and includes such unlikely botanicals
like lingonberries, blackberries and honey
pomelo.
Best served with a lime zest and lime twist with a
Fever Tree Elderflower Tonic.

PLYMOUTH GIN................ €6.50
Plymouth Original Strength is a unique,
protected style of gin originating from the
oldest working distillery in England. The gin
itself has a great depth of flavour with deep
earthy notes and wonderfully fresh juniper
and lemon bite. It has a slight sweetness with
extraordinary concentration and complexity.
No single botanical dominates the overall
flavour. The finish is long and dry.

Plymouth Sloe Gin has a rich red colour,
which is the result of steeping the finest
sloe berries in high strength Plymouth Gin
and soft Dartmoor water. The result is a
smooth liqueur taste with a beautiful balance
between sweet and bitter fruit flavours, and
a hint of almonds from the stone of the fruit.

PUERTO DE INDIAS...... €7.00
A premium classic gin. This dry gin is
produced in one of the oldest distilleries
in the Spanish province of Seville. The gin
has a robust character, and a crystal clear
appearance. It is a more intense, more citrus
flavoured gin. Lime, grapefruit, orange, lemon
peel and coriander bring a fresh touch to the
palate.
Best served with juniper berry, lime zest, a lime
wedge and a Fever Tree Indian Tonic.

This classic gin from Belfast is distilled over
a long period of time using copper still pots.
Jawbox gin is named in honour of one of
the Belfast sinks “the jawbox”. The gin
botanicals are a careful selection of local and
exotic botanicals giving a bold flavour while
preserving the delicate botanicals. Crisp
citrus, coriander and a firm pine flavour.This
is joined by the quiet complexity of pepper,
green angelica and a fine rootiness.

Shortcross is a Irish craft distilled gin from
the north that uses wild clover, green apples,
cassia, elderflower and elderberry amongst
its host of botanicals. On the nose there is
a massive juniper hit which sits behind an
earthy nose of elderflower and elderberry.

Opihr takes it’s name from the legendary
port from which King Salomon received a
cargo of gold and silver every 3 years. Opihr
Gin has a heady spice mix with cardamom
very much raising its hand above the rest of
the class. There’s also a cheeky, zesty citrus

is a spiced explosion to taste, there is a
discernible sweetness from the orange in
Opihr Gin.

5 Lamps Dublin lager is a traditional Czech
style pilsner. It has a slightly more complex
taste profile than the commercially produced
lagers, with a biscuty malt flavour and some
fruit notes. The bitterness which is provided
by the hops, while a little higher than we
are used to with the commercial lagers are
still relatively soft and rounded and should
be well within the comfort zone of most
consumers. It has a slightly darker colour
than mainstream lagers due to the caramalt
used and the touch of spice you might pick
up on is courtesy of noble Saaz hops. Crisp
and refreshing as all good lagers should be
but with a little something more!
