Held on 2 and 3 October 2019 at SHATEC Institutes, Star Chef 2019 challenged chefs in teams of two to demonstrate their
culinary skills in either a Western Fusion competition or a Asian competition.

The competition followed a mystery-box format, whereby participants only found out the main ingredients for their starter
and main course 45 minutes before the start of the competition. This year the competition also promoted sustainability:
aprons and chef jackets were made of sustainable materials by Chaud Devant (Worth’s Apparel Design), and the marketplace
featured local produce from MEOD, sustainable chocolates from Callebaut (Food Xervices) and plant-based protein such as
Omni-pork (Green Monday).

All teams were to prepare 1 starter, 1 main course and 1 dessert for judging. 2019’s panel of esteemed judges included: Chef
Pung Lu Tin, Chef Eric Neo, Chef Frankie Ong, Chef Ku Keung, Chef Daniel Tay, Chef Michael Lau, Chef Louis Tay, Chef Elvin
Chew and RAS council members Mr Dickson Low and Mr Han Jin Juan.

As part of the Growth Development sub-committee, a Legal Clinic was developed to assist newer restauranteurs with their
legal concerns such as understanding legal terms, documents and licenses. Alexander Pang, CEO of New Ubin Seafood
graciously hosted our members and shared his vast experience. Alexander Pang was previously a lawyer and is presently a

RAS and Enterprise Singapore, organised a recce mission to Ho Chi Minh (HCM) and Hanoi from 12 to 16 May 2019, as part
of a bigger joint Food Services and Retail Mission to Vietnam.

The aims were to achieve a deeper understanding of the Vietnamese F&B market, explore opportunities for Singapore
companies in Vietnam and develop relationships with partners (F&B operators, franchisees, mall operators, local distributors
and professional services providers) to assist brand expansion into the market.

Vietnam is a strong market with good economic growth in South East Asia, with HCM and Hanoi being the 2 main ports of
entry into Vietnam for international F&B players. There are strong opportunities for Singapore F&B companies to venture
into this market, either via joint venture or franchising routes.

Participants visited a total of 9 shopping malls and met with various consultants, mall operators/developers, Vietnamese and
Singapore F&B companies.

RAS, with support from the Restaurant Association Vietnam (RAV) and Enterprise Singapore, welcomed 18 Vietnamese
delegates to Singapore from 25 – 27 September 2019. The objectives of the mission were for local F&B companies to
explore, validate and secure partnership opportunities with Vietnamese investors, franchisees, joint-venture partners and
operators, with interest to collaborate with Singapore companies. The mission also sought to promote knowledge exchange
on the business landscape and market opportunities in both Vietnam and Singapore.

The Vietnamese delegates visited 9 local F&B companies across three days, providing them with the opportunity to experience,
immerse and taste our local F&B concepts. The delegation visited companies such as Select Group, Creative Eateries, PUTIEN,
Joe & Dough, Gratify Group, Greendot, CJS Catering, Tung Lok Group and Yolé.

The mission concluded with a networking session that was open to all RAS members. Hosted by our member CJS Catering,
the session was held at Sea Scent at Keppel Club and comprised presentations by industry experts that provided tips and
insights on ways to successfully internationalise one’s F&B business. In addition, Orissa International conducted exclusive
one-to-one clinic advisory sessions to assist local restauranteurs on their regional expansion plans.

RAS hopes to continue our long-term partnership with RAV and will continue to support our members on their global
internationalization efforts.
