The lan g ua g e
of wine
Finish refers to the wine's aftertaste and
describes the effect of the fullness and aromas.
Barrique describes a small wooden barrel used to
age wine that is usually made of oak. Wines aged in
barrique have an aromatic and smoky note. Cuvée
refers to a blend of different wines created to
harmonise flavours or produce a specific taste.
Decanting describes the process of pouring wine
into a carafe. It allows the wine to "breathe" and
unfold its full aroma and also results in any particles
being deposited at the bottom, which then remain
in the decanter when the wine is poured. Full
bodied refers to wines with a lot of substance such
as tannins, fruit, scent, flavour or alcohol. Dry refers

Indulgence and a regional approach – two things that accompany us and
our guests every day. We bring them together by reinterpreting Austrian
cuisine using fresh products and ingredients from our immediate
surroundings – and with farmhouse bread served fresh from our oven
every day. Promoting a regional approach and biodiversity is something
close to our hearts and we are particularly proud of the close collaboration
we have with local farmers and producers.

Our mum bakes our home-made bread according to family tradition.
Ingredients for Preparation
the pre-ferment: ~~ Mix all of the ingredients for the pre-ferment
~~ 750 g whole rye flour and leave covered for 6 to 12 hours at room temperature.
