Executive Chef jW Foster leads the kitchen at Canada’s icon, Fairmont Royal
York. In addition to overseeing all restaurants and event spaces, Chef is also
keeper of our rooftop herb garden and apiary, home to over 300,000 bees.
The award-winning Fairmont honey they produce, and a range of rooftop herbs,
can be found in many of our farm to table offerings and signature cocktails.
Creating the finest culinary memories for the over 1,000 weddings he’s
catered in his 15-year Fairmont career, jW has especially loved arranging
authentic presentations for informal, family-style receptions, taking the popular
trend to the next level. When asked his favourite part of the occasion he says,

house. When she returned, Natasha opened the front door to a path of white
rose petals leading to the kitchen. On the table sat an iPad and a note with three
steps; unlock the iPad with the digits of their first date, watch the preloaded
video, and then walk to the backyard. To her delight, once Natasha unlocked
the screen and pressed play, Sashank had created a video of their favourite
scenes from Friends and How I Met Your Mother. With tears running down her
cheeks, Natasha stepped into the backyard and saw Sashank had covered their
deck with rows of vines, flowers, and photos of the two of them. Placed on
their backyard table was an engagement ring and a letter, along with a very
thoughtful way to include and memorialize Natasha’s beloved dog who had

Upon entering FAIRMONT ROYAL YORK, guests were greeted
by a spectacular floral arch around the ballroom door created
by RACHEL A. CLINGEN WEDDING & EVENT DESIGN, and a
