possible.
This is especially true of semi-cooked prunes: these are first-class prunes par excellence. They are the jewel of the
harvest, selected from the biggest sizes and the sunniest orchards, giving them their unique and highly prized flavour.
Semi-cooked prunes are special because cooking is stopped at 35% humidity and there is no need for them to be
rehydrated.
