History of sake
Sake is the traditional rice wine of Japan. First made nearly 2,000 years ago, sake has played an important
role in Japanese culture and history, from its origins as the “drink of the gods” to its current status as one of the
most popular drinks for entertaining throughout this country today.Sake began to be brewed in Japan after the
practice of wet rice cultivation was introduced, around 300 BC. While the ingredients of sake can be traced to
China as far back as 4000 BC, it was the Japanese who began mass production of this simple but delicious
rice beverage.

Just as it takes a special varietal of grape to produce a memorable wine, making excellent sake begins with a
specific grain of rice boasting a high starch content at its core that stays intact through the brewing process. It
allows excess oil and protein to be removed. This rice is called Shinpaku-mai in Japanese.

The basic process of making sake involves milling or “polishing” the rice kernels, which are then cooked in
good, clean water and made into a mash. Sake was initially only produced for private consumption by
individual families or villages. The earliest “polishing” was done by the village itself, where each person would

                                                                        mixture into a communal tub. (This particular sake sake was called
                                                                        “kuchimaki no sake”, which is Japanese for “chewing the mouth sake.”)

                                                                         Sake is more than Japan’s traditional beverage. It’s also used for many
                                                                         different purposes in the Shinto religion, including as an offering to the gods
                                                                         and to purify the temple. The bride and groom each consume sake in the
                                                                         Shinto wedding ceremony known as Sansankudo.

                                                                         It was in the 1300’s that mass production of sake established this beverage
                                                                         as Japan’s definitive drink. In the years that followed, production processes
                                                                         improved and sake breweries popped up throughout the nation. In the
                                                                         Twentieth Century, a mechanical press replaced the traditional canvas bags
                                                                         for squeezing the liquid from the rice mash, yeast, and koji mixture; Some
                                                                         sake is still brewed this old-fashioned way.

                                                                         While the brewing process and availability of sake has changed over the
                                                                         years, its important role in Japanese culture has not. From its earliest
                                                                         beginnings, sake has been a drink of reverence, family, and friendship –
                                                                         consumed to mark important occasions. Because it is meant to be enjoyed
                                                                         with friends and family, tradition holds that a person must never pour their
                                                                         own sake first. Sake is at the heart of Japanese life, and its popularity is
                                                                         now increasing on the International stage.

There are ninety-nine different ways to write
“sushi” in the Japanese script of kanji. Each with its
own unique interpretation and meaning. It is no
mistake that founder,“Billy” chose 寿司 to best
represent his personal interpretation of the word -
celebration of fish!

That’s exactly how Billy feels about the art of
making sushi and the atmosphere that surrounds it
- it should be a celebration! Which is why Billy
Sushi is more than just a restaurant, it is an
experience for anyone who allows themselves to
take part.

A three-ring performance of sorts - sushi bar, saki
bar and dining room - brought to life by the
performances of sushi chefs, bartenders and
servers.

And at the center of it all…the Ring Master and
your host, Billy.

Who is Billy?

A national-renowned sushi chef in his own right, Billy was a Global Sushi Challenge contender two years running, representing the
U.S. as one of the nine best sushi chefs in America.

Most likely Minnesota’s only Mongolian-born, Russian-Speaking, Japanese-trained restaurateur, Billy is the founder of Sushi Fix, the
metro's first sushi food truck which eventually evolved into a brick and mortar location in downtown Wayzata.

He went on to open a Mexican restaurant as well as start a poke burrito food truck that also evolved into a downtown Minneapolis
location. But Billy’s passion for sushi eventually led him back to his roots and the North Loop.

If Billy is here when you visit, and he usually is, you’ll know it. His love of life and people will be obvious as he greets guests at the
door, table hops, and laughs his way into your hearts.

are ever in doubt what to order or have been here many times, maybe consider

What are WAGYU?

WAGYU - a Japanese beef cattle breed – derive from native Asian cattle. 'WAGYU'
refers to all Japanese beef cattle, where 'Wa' means Japanese and 'gyu' means
cow.

Wagyu were originally draft animals used in agriculture, and were selected for
their physical endurance. This selection favored animals with more intra-
muscular fat cells – ‘marbling’ – which provided a readily available energy
source. Wagyu is a horned breed and the cattle are either black or red in color.

                     WAGYU Beef — Delicious and Healthy
The unique taste and tenderness of highly marbled Wagyu beef makes for an
unrivaled eating experience. That is why Wagyu beef is finding its way into the
repertoires of Gourmet cooks and fine restaurants across the US.
Not only is it a gastronomic delight, but it’s healthy for you too. Health experts
have discovered the mono-unsaturated to saturated fat ratio is higher in Wagyu
than in other beef and, the saturated fat contained in Wagyu is different. Forty
percent is in a version called stearic acid, which is regarded as having a minimal
impact in raising cholesterol levels. The profile of marbled Wagyu beef is more
beneficial and healthier to human health.
Wagyu is also higher in a type of fatty acid called conjugated linoleic acid (CLA).
Wagyu beef contain the highest amount of CLA per gram of any foodstuff – about
30% more than other beef breeds – due to higher linoleic acid levels. Foods that
are naturally high in CLA have fewer negative health effects.
