How to Harvest Summer Vegetables

Recipe/Receta:
Veggie and Grain Patty

Grains:
Betet (Barley) Faro, Lentils and Bulgur (black or brown rice can be added)
     Sautee the combination of Barley Faro lentil and Bulgur in a little olive/coconut oil and season with a
     little Trader Joes Everyday Season or 21 Season Salute. Can add hot pepper based on desire
     Add the water (or fresh squeeze coconut milk for flavor) cover the pot and cook the grains
Vegetables:
Chard, back chow, shallot garlic, a little scotch bonnet or Ghost pepper for spice kick, carrots for color.
      Sautee the shallot and Garlic in a little olive oil and season with a little Jamaican dry Jerk or Trader
      Joe everyday seasoning
      Add the carrot, cut up the Chard and back chow and cook for a few minutes (do not overcook the
      vegetables). Optional vegetable mix such as green beans, cabbage can be used. Sauteed or baked
      mushrooms can be used.
Pastry Dough:
 ●    Soak the Annatto (4 tablespoons) in Sunflower oil at least two day prior to making the dough
 ●    2 and a half cup of flour, 1 teaspoon of salt, 2 teaspoon of brown sugar (optional)
 ●    3⁄4 stick of unsalted butter
 ●    1⁄4 cup of cold vegetable shortening
 ●    1 tablespoon of apple cider vinegar
 ●    7 tablespoon of ice cold water
Split the butter and shortening in half
I usually sieve the flour after adding the sugar and salt
Add half of the butter and shortening to the flour and wok it in with your fingers, it starts to get grainy
Add the rest of the butter and shortening and work it in with your fingers. As the butter and shortening
blend in with the flour you get the grainy feel.
Sprinkle the ice water and apple cider vinegar slowly and evenly over the flour
Then
Use your hands and fold the mix into a ball
Cut in two Flatten them out
Put in a plastic wrap and put it into the refrigerator for a least a an hour before making the actual patties

Dough:
Assemble and Bake:
 1.   Cut the Dough in six equal parts
 2.   Dust the dough board with a little flour and roll out the dough
 3.   Remove to a plate and add the vegetable mix in the rolled out dough
 4.   Fold it over cut off any excess dough
 5.   Use a fork to bring the ends together
 6.   Sometimes I just roll over the dough with the fillings in the shape that I take it off the pastry board
 7.   Repeat the process for the other five cuts
 8.   Oil the baking pan and lay the patties
 9.   Use a brush to Base the top of the patties with the Annatto oil
10.   Bake at 350 degrees 25 to 30 minutes
