Welcome to Fishbank’s world of wine. In these pages, there’s a wine to suit everyone. Working
closely with Executive Chef, Tony Carroll, we have created a list inspired by our incredible local
producers and our friends and makers across the globe. Our wine list channels the Fishbank
philosophy of never taking life too seriously! If you’re a traditionalist and prefer a crisp Riesling
with your seafood, so be it. But if you’re happy to be extended to a grand white Burgundy or red wine
of lustre and depth, let’s chat about that too.

TOLPUDDLE CHARDONNAY FLIGHT                                                                                         50

The Tolpuddle Vineyard was planted in 1988 and since then has enjoyed almost continuous recognition and priase. Since
2011, owners Michael Hill-Smith MW and Martin Shaw (of Shaw + Smith fame) continue the legacy and greatness of just
20 hecatres in the Coal River Valley, 20 minutes from Hobart, Tasmania. Chardonnay and seafood are old friends, there is
no question there; bottle age and prestige are perhaps even more so. Sit back and enjoy a retrospective flight flaunting
the efforts of expert vineyard management, careful winemaking and some of the world’s finest cool climate Chardonnay.

     The commune of Fixin in northern Burgundy consistently produces some of the most saught after Pinot Noir made for
     drinking with some bottle age. Domaine Bart focusses on a tightrope balance between acid, tannin, fruit and texture using
     organic principles in the vineyard and hand selecting these Premier Cru bunches for vinification. Enjoy notes of intense
     violet, cherry and quince with a sprinkling of musk and pink pepper.

SOMETHING

SAKE

     Sake is a Japanese style of rice wine. The process of production is incredibly complex compared to that
     of other alcoholic beverages. It is a masterfully created blend of certain types of rice, grown different
     ways, mould with different properties and water with certain characteristics. This is all fermented
     together to create an end product that can behave like wine; some styles are meant to be drunk whilst
     young, fresh and zippy, whereas some styles are made to age gracefully, revealing layers of texture and
     depth. Sake is a traditional drink in Japanese culture and has roots dating back to the 3rd century BC. It
     is no wonder that the worlds inspiration for fresh and raw seafood cuts choose to drink such charismatic
     and satisfying ferments as these.

MARCO DE JEREZ AND THE GRAPE PALOMINO

Marco de Jerez is a gorgeous region of rolling hills inland from the atlantic coast and north from the
bay of Cádiz. Of the nine wine-making villages of the region, it’s centered on, and is named for the main
town, Jerez de la Frontera. The most famous local wine, ‘sherry’ also takes its name from Jerez. In most
places you can see the atlantic; you can feel it everywhere. Cool, moist, mythical. The lands glisten and
twinkle when the sun catches the dazzling chalky soil.
Palomino is one of the white grapes native to Marco de Jerez, and nowadays by far its dominant
cultivar. In the wine styles of Jerez, potentially acid-shy Palomino gets plenty of help in filling the
hole where acidity should go. In the great vineyards, with quality viticultural values, Palomino naturally
gains structural mouthfeel from the textured, earthy but fresh and highly sensual chalk soils. And
then, winemaking adds on complex overlays from the region’s techniques of ageing in conjunction with
moderated oxidative ingress. Air, time and the interplay of flor yeast give secondary compounds.

           A Palomino aged without flor. Delicate herbal tea. The palate is floral-
           flavour equivalent of marmalade, without any viscous sweetness,
           finishing lean and dry. Soft, gentle, mineral, and clean.

           An unsulphured skin contact or orange wine from white grapes. Chalky,
           peach and ruby grapefruit aromas, Light, linear palate with candied
           lemon up front and honey and jasmine to finish with that hallmark saline
           sea spray from the region.

           Preserved citrus rind, some meal, floral with golden apple skin,
           marzipan, aldehyde in the form of elderflower gin. It’s brightly earthy,
           deep and soft to smell, and gloriously, endlessly effortless.

           The tastes and textures are concentrated and dried like vegetable chips,
           glazed with orange caramel scent and herb spice low in the mouth. The
           palate is beautifully round and centred, leaving space for time and the
           warmth of one’s mouth to fan savoury earthen perfumes, complex and
           gentle at once.

Everyone has got to know this wine! Sourced solely from vineyards within the commune of Montlouis, and dedicated
100% to Chenin Blanc, this striking sparkling brings a smile to the face. Medium gold in hue, the colour betrays layers of
texture and effervescence. Blossoms of acacia and jasmine, lemon custard, quince and honeysuckle. Perfect with freshly
shucked oysters.

     We were eager to source a wine of this provenance and when Stuart Angas, winemaker and seventh generation custodian
     of the property, offered us the remaining 80 bottles in South Australia we immediately jumped at the opportunity. Lemon
     and lime come to the front with generous support from a shining acidity and a chalky mineral texture. Balanced to the
     max, this can be mistaken for off dry, but don’t be fooled - a true rollercoaster of flavour and emotion.

CHENIN BLANC
Anyone who has a habit of taking comfort in the expected should be familiar with Chenin Blanc.
Drinking Chenin is a trait shown in those with a discerning palate, mostly due to the highest

WHITE BURGUNDY

     Situated in east-central France, Burgundy is synonymous with prestige, intensity and a refined
     sense of terroir. Dominated by limestone soils, Bourgogne (the French spelling) produces
     some of the finest Chardonnays in the world, and by extension, some of the most sought after.
     Diversity is key here, with individual areas (known as communes) producing a vast array of
     flavour, texture and age-worthy wines. From the zippy, light and unoaked styles of Chablis in the
     north, to the power and precision of the Montrachets, and further south to the Macon, where oak
     regimes give butterballs and weight, Bourgogne wines are a slow but steady addiction. Once you

There’s always one around, one who doesn’t drink white wine. Or perhaps, being in South Australia,
you simply prefer a big, bold red; something designed to knock your socks off with bolshy red and
black fruits, Christmas cake and vanillin. Here, you are in good hands.

This is a red wine offering based on, yes, our seasonal menu, but also, much more than that. It is an
exploration and celebration of some of the world’s best, some of the world’s most unique and some
of the world’s unsung beauties. As the provenance of our fresh seafood is of the utmost importance
insofar as understanding flavours, seasonal availability and decadence, as is the story behind our
wine selections. Drawing from Tony Carroll’s menu, a menu rooted in cuisine from the globe, we are
proud to offer the same philosophy with your beverage experience.

From the cooler Adelaide Hills, our closest local region, through to the mediterranean McLaren Vale
and Blewitt Springs down south then north to the Barossa and Eden Valleys, local legends and young
blood are championed here. International entries from all the colours of the red varietals rainbow
make their mark from the crisp, acid driven reds of Etna through to the grandeur and prestige of
Burgundy and Barolo. Varietals of the Iberian Peninsula are reflected both in true representations
(Rioja) as well as our own (McLaren Vale, Barossa Valley).

Perhaps the most exciting thing here are the reds that pair so well with seafood dishes. If tradition
can convince you, then don’t worry, a large portion of the world has been doing it for centuries. If
tradition can’t convince you, then our advice is simple: you do you, that seems to work best. Never

This is the second wine of the family estate owned by Emmanuel Reynaud, the modern genius behind Chateau Rayas. A
classic Rhone blend of 65% Grenache, 20% Syrah and 15% Cinsault, this sits firmly on the list as one of the most food
friendly and unforgettable reds. It has a powerful ruby hue complimenting the iron ore nose with dried blood orange,
plump purple fruits and black and green peppercorns. Truly enticing and truly worthwhile.

     If you ask winemaker Andrew ‘Ox’ Hardy if anyone else in the world is using specially constructed slate fermenters these
     days his answer is going to be ‘No.’, which he then follows up with a cheeky smile. Built by his ancestors over 100 years
     ago, these fermenters are the very reason his family has such a big name in the McLaren Vale and Blewitt Springs regions.
     The results are evident, too; fermenting Shiraz grapes in slate vats imparts a gorgeous silvery texture whilst maintaining
     fruit freshness and slippery tannins.

WHAT TO DRINK AFTER
Dessert wines always present an issue when dining out. Unless you’re weak of will, like
us, then it is simply impossible to drink everything you want over the course of a meal. We
often read wine lists backwards in anticipation of the sugary delights one can convince
company to splurge on at the end of a meal, and in doing so, you are encouraged to do the
same. Dessert wines don’t behave like red or white wines, instead they are like the ‘Champagne
of the finale’; rather than arriving, people are leaving, rather than snacking, people are folding
their napkins, pushing their cutlery away. And rather than a POP followed by bright fizz and
a polite laugh, we seek syrupy goodness, a warming sensation deep within and uproarious
merriment. Wines of this magnitude, like the ones listed below, tend to push the boundaries,
both socially and with their ability to command your attention and keep it.
