Starred creative

Maximin Hellio:
a cuisine made of sense
and history
Maximin Hellio, who has been cooking
from childhood, followed the footsteps of
his father, starred chef in Brittany at the La
Voile d’Or hotel restaurant. After his studies,
he left home to work with the greatest
personalities in French cuisine, including
Frédéric Anton and the Raimbault brothers,
and then he decided to open his own
restaurant in Deauville. He gained his first
Michelin Guide star in 2016.
Today, Maximin and his wife Sophie receive
their guests in a contemporary sober
setting, in the vicinity of Place Morny and
the market.
On the menu, Maximin Hellio enhances the
taste of the many local products selected
with passion. Their innovative and essential
gastronomic cuisine changes every week
depending on what they get from local
producers or from their own vegetable
garden.
Surprising dishes, a journey between
pastures and sea sprays, may be shared or
taken home all year round.

dishes led them to obtain their first Michelin
Guide star. Romanesco broccoli goes along

A wind from the south blows on the kitchens of
Cures Marines of Trouville: James Chauchat-
Rozier, who took over from Johan Thyriot,
comes from a 4-star hotel of Cannes. During
his career, he has worked with famous starred
chefs like Yannick Allenno (Cheval Blanc,
Courchevel), David Bisetto (Casadelmar, Porto-
Vecchio - 2 Michelin stars) and Philippe Jego
(Les Pêcheurs, Cap d’Antibes). His challenge:
add a Mediterranean touch to the best local
products… He says that he was “born in olive
oil”, but from reading the many press articles
on his cuisine, we understand that he creates
fine gastronomic dishes with determination
and a taste for details.

In the naturally-lit hall of the restaurant of
