A QUESTION OF TASTE 1

Starred creative

                   Maximin Hellio:
                   a cuisine made of sense
                   and history
Maximin Hellio, who has been cooking
from childhood, followed the footsteps of
his father, starred chef in Brittany at the La
Voile d’Or hotel restaurant. After his studies,
he left home to work with the greatest
                   personalities in French cuisine, including
Frédéric Anton and the Raimbault brothers,
and then he decided to open his own
restaurant in Deauville. He gained his first
                   Michelin Guide star in 2016.
Today, Maximin and his wife Sophie receive
their guests in a contemporary sober
setting, in the vicinity of Place Morny and
                   the market.
On the menu, Maximin Hellio enhances the
taste of the many local products selected
with passion. Their innovative and essential
                   gastronomic cuisine changes every week
depending on what they get from local
producers or from their own vegetable
                   garden.
                   Surprising dishes, a journey between
pastures and sea sprays, may be shared or
                   taken home all year round.

A new chef in Le 1912
A wind from the south blows on the kitchens of
Cures Marines of Trouville: James Chauchat-
Rozier, who took over from Johan Thyriot,
comes from a 4-star hotel of Cannes. During
his career, he has worked with famous starred
chefs like Yannick Allenno (Cheval Blanc,
Courchevel), David Bisetto (Casadelmar, Porto-
Vecchio - 2 Michelin stars) and Philippe Jego
(Les Pêcheurs, Cap d’Antibes). His challenge:
add a Mediterranean touch to the best local
products… He says that he was “born in olive
oil”, but from reading the many press articles
on his cuisine, we understand that he creates
fine gastronomic dishes with determination
and a taste for details.

A QUESTION OF TASTE 2

                Enjoy a seafood
                    platter
With 600 km of coasts, Normandy draws part of its gastronomic identity from the sea. In summer,
fishermen stock up on mussels, sole, lobsters and mackerel before harvesting the traditional
scallops in winter. Directly available in the local markets, they are even better cooked by our
chefs. Saint-Vaast oysters, lobsters, prawns and whelks are all prepared with love to make up
flavoursome dishes or platters. From Villers-sur-Mer to Deauville and Trouville-sur-Mer, you can
enjoy fish and seafood on a terrace, feet in the sand or in front of the fishing port. Here is our
selection of gastronomic places to taste near the stall of an oyster seller or in an unusual place.

Le Mermoz
It’s the utmost brasserie of Villers-sur-mer, a
few steps away from the seaside boardwalk.
The interior design pays tribute to the great
French aviator Jean Mermoz, a legendary
figure of the Aéropostale, nicknamed the
“Archangel”. The chef cooks local products:
Norman meat, vegetables from Pennedepie,
coffee from an artisan coffee-roasting
company of the Pays d’Auge... It’s also the
best spot to see the sunset or listen to the
bands performing during the Sable Show
festival!
