The Sire Story

In 1853 Captain Richard King and Gideon K. Lewis founded The King Ranch
with a modest 15,500 acres. Through years the ranch has grown to an area
larger than the state of Rhode Island. One of the ranch’s many legacies was
developing champion thoroughbred and quarter horse sires whose blood
lines are still sought after today.

The most heralded thoroughbred from The King Ranch was Assault, the
first and only Texas foaled and bred Triple Crown Winner. After overcoming
a series of maladies, including one that led him to have a permanent limp,
“The Club-Footed Comet” began a very successful racing career. In 1946 after
winning the Kentucky Derby, the preakness and belmont stakes, he became
the seventh of 13 horses to win the Triple Crown.

Port & Sherry
Port is a fortified wine produced in the Douro, a valley in Portugal running from
near the Spanish border in the north-east of the country to Porto, the coastal city
which gives the wine its name.

Bourbon
Bourbon is America’s only native spirit as declared by congress in 1964.
It must be made with a minimum of 51% corn and aged in charred new
oak barrels and store no more than 125 proof and bottled no less than
80 proof.

The name is ultimately derived from the
French bourbon dynasty, although it is
disputed whether Bourbon County in
Kentucky or Bourbon Street in New Orleans
inspired the whiskey’s name. Bourbon has
been distilled since the 18th century. The
use of the term “bourbon” for the whiskey
has been traced to the 1820’s, and the term
began to be used consistently in Kentucky
in the 1870’s. With that being said Kentucky
is the birthplace of bourbon, crafting 95% of
the world’s supply and many of the world’s
greatest bourbons.

Rye
In an era where strong flavours are back in style, rye is enjoying a new golden
age. It has to have a mash content of at least 51% rye (which means it can’t be
called bourbon) and, if aged for at least two years in new charred oak barrels, it
earns the moniker ‘straight rye’. Rye is all about rich spice, power, structure and a
distinctively bitter finish. These attributes can make it challenging to taste when
young, but with time they mellow into new levels of complexity.

Canadian
Although it shares certain characteristics with Scotch whisky and bourbon,
Canadian whisky has a style all its own, thanks to a unique means of production and
the influence – sometimes subtle, sometimes obvious – of rye. And if Prohibition
nearly killed American whiskey, it helped Canadian distillers to thrive.

American
Once dominated by two monoliths American whiskey-making is rediscovering
its artisanal origins courtesy of the hundreds of craft distillers springing up
everywhere from Washington State to Virginia. In the US, distilling is dynamic
and exciting again. Many distilleries have deliberately eschewed the conventional
template of just making bourbon, allowing their imaginations free rein and
concocting experimental liquids that play around with obscure cereal types,
bizarre smoking processes and accelerated maturation techniques.

Japanese whiskies are produced strictly in Japan. Whisky production in Japan emerged
around 1870, however, the first commercial production began in 1924 upon the opening
of the country’s first distillery, Yamazaki. Broadly speaking the style of Japanese whisky
is more like that of Scotch whisky than any other major style of whisky.
There are several companies producing whisky in Japan, but the two best-known
and most widely available are Suntory and Nikka. Both distilleries produce blended
whiskies, single malt whiskies and blended malt whiskies.

Scotch
Scotch whisky evolved from a scottish drink called uisge beatha, which means
“water of life.” The earliest record of distillation in scotland occurred as long
ago as 1494, as documented in the exchequer rolls, which were records of royal
income and expenditure.

All Scotch whisky was originally made from malted barley. Scotch whisky is
divided into five distinct categories: single malt Scotch whisky, single grain Scotch
whisky, blended malt Scotch whisky, blended grain Scotch whisky, and blended
Scotch whisky.

All Scotch whisky must be aged in oak barrels for at least three years. Any age
statement on a bottle of Scotch whisky, expressed in numerical form, must reflect
the age of the youngest whisky used to produce that product. A whisky with an
age statement is known as guaranteed-age whisky.

Many Scotch whisky drinkers will refer to a unit for drinking as a dram.

Once a whisky boom town of 34 distilleries famed for their smoky, oily character,
Campbeltown is quieter now, with only three producers – and one of those only
resurrected in 2004. Nonetheless, there are a number of styles here, including peaty
whiskies which are a reminder of a illustrious past.

Highlands & Islands
To call Highland single malts diverse is an understatement: stretching from the
Glasgow commuter belt to the Pentland Firth and from the fertile east coast to the
rugged west, this vast area boasts a rich variety of distillery styles. From light and
grassy to heavily sherried – these are whiskies that refuse to be pigeonholed.

islay
Islay is best known for its disproportionately high number of distilleries – eight,
with more planned – and for a distinctively peaty style of single malt. Beyond the
obvious lurks a surprising diversity of spirit, making the identity of Islay whisky a
more elusive prospect than might first appear.
Islay’s smoky style comes from malting barley over burning peat, giving
flavors known as phenols.

Lowlands
There’s more distillation in the Lowlands than any other Scottish region, but
its days as a significant single malt player are consigned to history. This is the
home of the blend, and of the large quantities of grain whisky which form
its foundation – but a few producers keep up the trademark light and grassy
Lowland malt style.

Speyside
The most densely populated whisky region in the world sits in a fertile valley of rivers,
and glens. Home to over half of Scotland’s distilleries, Speyside Malts from these fifty or
so distilleries are known for being frugal with peat and lavish with nutty fruit flavors.
Apple, pear, honey, vanilla and spice all have a part to play in the Speyside Whiskies.

For most people, their first encounter with Scotch whisky involves a blend – but
then about 90% of the market is made up of products which combine malt and grain

IRELAND
For an industry that, until recently, had only three operational distilleries, Irish
whiskey offers a richly varied array of styles and production methods. Double
distillation, triple distillation – and a unique style of pot still whiskey that owes its
genesis to a tax dodge. some historians claim that 19th-century Irish (and many
American) distillers added the ‘e’ to ‘whisky’ to distinguish themselves from the sub-
