Cavatina is a charming and impassioned program for strings from the Mannheim
Court and the Classical and early Romantic eras with works by Mozart, Richter,
Rossini and the young Mendelssohn. Beethoven’s lyrical Cavatina is at the heart of
the program performed on period instruments by principal musicians of the
Australian Romantic & Classical Orchestra.

"When I think of the Cavatina, it still brings a tear to my eye.” – Beethoven

Apple Strudel Recipe (V)

750g Bramley apples (cooking 75g raisins
apples), peeled, cored and sliced 95g butter
1 1/2 ground cinnamon 40g white breadcrumbs
1/2 unwaxed lemon, zest only 6 large sheets of filo pastry
2 teaspoons of lemon juice I tablespoon of icing sugar
100g caster sugar

Preheat to 170° fan
Line a baking tray with baking parchment.

Mix the apples with the cinnamon, lemon zest and juice, sugar and raisins. In a
small frying pan, melt 20 g of butter and fry the breadcrumbs until golden-brown,
then add to the apple mixture

Melt the remaining butter in a pan. On a clean, dry tea-towel lay a sheet of filo
pastry and brush with some of the melted butter. Lay another sheet on top and
repeat until you have used all of the filo.

Pile the filling along the long side of the pastry about 2 to 3 cm from the edge and
using the tea towel to help you roll the pastry up to enclose the filling tucking in the
ends as you roll. Place the role seam-side down on a lined baking sheet. Brush with
the remaining melted butter.

Bake for 40 to 45 minutes, until golden brown. Leave to cool to room temperature
and dust with icing sugar. Slice and serve with cream, ice cream or custard.
ARCO Resources

Voyage of Musical Discovery Music Education Programs
Access to our Voyage videos and accompanying Education Kits from 2018 until the
present. The Voyage is equal parts concert and demonstration and each Voyage
includes the Australian Romantic & Classical Orchestra in the first half, and a
contemporary guest artist or ensemble is featured in the second half. By placing
contemporary Australian music alongside earlier Classical and Romantic works,
listeners are shown the many compositional links and similarities in structure,
tonality, rhythmic function, orchestration and modes of expression. Voyage videos
are regularly being uploaded to this page.
