Our 4-star establishment in a villa
style has been privately owned since
it first opened, and comprises a total
of 110 beds spread over 53 rooms.
    Hotel Caroline Mathilde lies amidst
    magnificent park-like surrounds, and
consists of two buildings with a con-
    necting outdoor walkway. Selected
rooms have a small balcony affording
views over the charming hotel gar-
dens or the only vineyard in Celle.
Located on Alter Bremer Weg (a qui-
et side street), Hotel Caroline Mathil-
de lies just a short distance from
Celle’s historic old town that features
    over 500 lovingly restored half
timbered houses, all of which of course afford
listed status. Picturesque scenery and unfor-
gettable impressions. Each room has its own
individual style, and almost all have a different
layout, reflecting the multifaceted character of
our hotel in a modern villa style. Choose your
personal preference from three room catego-
ries: business, comfort, or comfort with air
    conditioning.
The slightly smaller, light-filled, semi-circular “Rundbogenzimmer” is
something of an insiders’ tip among our guests: views can even be en-
joyed over the garden whilst taking a shower here. Our hotel also fea-
tures a swimming pool, Finnish sauna, heat bench, and tepidarium. Res-
taurant “Kanapé” caters to guests’ culinary needs, offering food, drinks,
wines, and – during the summer months – a wonderful outdoor terrace.

Welcome to one of the finest hotels in the north of Germany! The Palais Adeleb-
sen, today the Althoff Hotel Fürstenhof, is the only manor house dating from
Celle’s baroque period that remains fully preserved to this day. Planted with
century-old chestnut trees, the estate first opened as a hotel affording an indi-
vidual style back in 1970. All the conveniences and 5-star comfort are offered in
    a unique atmosphere.
With 72 rooms and suites, this comfortable retreat exudes the charm of an Eng-
lish country house and affords its own themed concept. Each floor is furnished
according to a different motto: horses, hunting, golf, romance, nobility, and the
heathlands, as inspired by the glorious local natural surrounds. The spa features
an indoor pool and sauna as well as fitness, beauty and wellness areas. A varied

Hotel “Brauhaus zum Löwen” is located at Kornmarkt 3 at the very heart of the
old town, and is today the only remaining brewery in the district of Unstrut-
Hainich. Built in the second half of the sixteenth century, the main hotel build-
ing was destroyed in a fire that ravaged the Kornmarkt in the year 1707. It was
subsequently rebuilt to its present state between 1707 and 1713, and served as
an apothecary in the almost 200 years that followed. The present-day “Brauhaus
zum Löwen” (“Lion Brewery”) owes its name to the “Löwen-Apotheke” (“Lion
Apothecary”) housed here in the 20th century. Following German reunification in
1989, the building stood empty for a time.
At least once a week, it is possible to watch the brewmaster preparing the brew.
Both lager (Reichsstädtische Pilsener) and dark ale (Apotheker Dunkel) are
brewed here in the traditional style – naturally strictly in accordance with the
German Beer Purity Law of 1516. The seasonal smoked beer (Rauchbier) and
strong dark beer (Weihnachtsbock) also should not go unmentioned. Around
350 kg malt are needed per brew, hence a crane and a great deal of muscle
powerare used to transfer the malt to the main building’s loft several times a
year where it is then processed into roasted, sour, Pilsener, Munich, or smoked
malt. Over time, the little “Brauhaus zum Löwen” in Mühlhausen has developed
into a hotel brewery with seating for 500 that also features a charming beer gar-
den (open April-October) affording views over the church on the Kornmarkt. The
hotel comprises a total of 81 tasteful rooms, 3 meeting rooms, a car park, and
     underground garage.

   Welcome to a feel-good atmosphere:
   where charming half-timbered history meets
   modernity.
The setting couldn’t be more picturesque: the CENTRI-
NUM Altstadt-Hotel is located at the heart of Melsun-
gen’s old town, just a short distance from the River Fulda,
entirely at one with the rustic flair of the half-timbered
house. In 2006, a cluster of listed buildings were carefully
converted to a hotel and subsequently expanded in 2010.
A fascinating transition was thus achieved in which the compelling architectural
link between tradition and modernity is apparent throughout.
Particular care was taken when furnishing the 22 rooms, which include one
apartment. Besides the oak wood flooring, no two rooms are alike. Their charm
derives from the harmony of the modern design, stylish furnishings, and historic
character of the rooms. Lifts, including one made entirely of glass, enable easy
access to all rooms located on the upper floors.
Stylish living is just one of the benefits offered at the CENTRINUM. Another is of
a gastronomic nature. Indeed, the culinary team knows how to surprise its guests
without overwhelming them. Both local specialities using fine ingredients from
the hotel’s kitchen garden as well as sophisticated menu creations exuding inter-
national flair can be enjoyed here. It is not without reason that the CENTRINUM
is also a popular venue for family celebrations.
The CENTRINUM Altstadt-Hotel is actually as popular with holidaymakers (in-
cluding a great many bicycle and motorcycle tourists) as it is with business trav-

Each of our rooms provides the perfect unique accommodation for an unforget-

“Alte Bergmühle” is the ideal setting for all kinds of events.
In 950 AD, Emperor Otto I designated the area around Dreieich a hunting
ground. The first imperial bailiff, Eberhard von Hagen, managed the game and
timber-rich forests with his team of 36 gamekeepers. A number of mills were
built along Hengstbach stream, including the Bergmühle, which was first men-
tioned in official records in 1422. The mill succumbed to fire during the Thirty
Years’ War, but was subsequently rebuilt. The Bergmühle, which is verifiably the
oldest residence of the Holzmann family (1675), came to the family through
marriage. One of the descendants was Philipp Holzmann. Born in 1805 he made
a name for himself with the construction of railways, bridges, and tunnels. In
1969, this piece of history reminding of times long past was restored, with care
taken to retain original building ele-
ments. Thus more than 20 generations
since its construction, the “Alte Berg-
     mühle” today once again serves
guests, who can look forward to first-
     rate hospitality in traditional sur-
     rounds.

The centuries-old “Bäck-Schwarz” guest house is located at the heart of
Altensteig’s historic old town. It is one of the oldest businesses in Ger-
many. The restaurant’s original low ceilings and door frames can prove
something of a challenge for taller guests. The saying here is “Riabl ai
ziage sonscht hauschd de Meggl nah” [“Keep your head down, else you’ll
hit it!”]. Treat yourself and a loved one to a romantic meal for two at
one of the sturdy inn tables, or enjoy a convivial few hours with a so-
ciable group. The tiled stove ensures cosy warmth during the winter
months.
The year-round motto here is “A guest among friends”. Smaller Swabian
dishes are served here, lovingly prepared by the warm-hearted landlady.
Allow yourself to be charmed by the unique rustic flair that prevails at
the “Bäck-Schwarz”. When you have been here once, you will return

the Parkhotel Jordanbad in Upper Swabian Biberach – “half way” be-
tween the city of Ulm and Mediterranean-like Lake Constance, so to
     speak.
It is perhaps unsurprising that the Parkhotel and Jordanbad thermal
baths are located exactly here, amidst pretty, sprawling parklands fea-
turing ancient mighty trees within a short distance of the historic old
town: they were designed and built to enable indulgence and health
benefits, and to allow guests to rediscover themselves.
The atmosphere fosters excellent conversations, creates the ideal setting
for relaxed meetings, and offers an idyllic venue for memorable celebra-
tions with your family and friends.
The team has set itself the goal of impressing guests time and time
again with new ideas, and sincere and authentic hospitality.
With its sprawling sauna offerings, the Jordanbad thermal baths covers
a total of 9,000 m² and forms the centrepiece of the hotel complex. The
restorative effects of the hot thermal waters (47°C) can be enjoyed in
seven different pools. A play of lights and underwater music in the larg-
est of the thermal pools guarantees a relaxing bathing experience.
The saltwater pool uses the heal-
ing powers of salt from the Dead
     Sea, complemented with soothing
massages on the bubble seats. Al-
     ternating scents in the aroma
pool will leave you dreaming, and
it is also possible to relax in the
spring source at a temperature of
     39°C.
     Highly-qualified staff provide
     treatments in cooperation with
     the adjacent wellness centre.

The Gasthof zum Bären is the oldest hotel in Meersburg; indeed, based
on excavation finds, it is believed to date from 1250 AD.
The year 1605 is engraved in the camber above the Renaissance gateway
featuring five angels’ heads. It was in this year that the guest house was
extended to its present-day size. A further building was added beside
the city gate some 75 years later, in 1680. When the Thurn-und-Taxis
Post established a postal service between Lindau and Constance in Sep-
tember 1688, the Bären became a stagecoach stop, heralding the start
of a heyday for the guest house. In the 200 years that followed, the
Bären played host to stagecoach travellers. Today the building that
served as stables is used as a garage.
It was only in 1960 that the hotel was again extended: the half-
timbered building dating from 1590 and renovated in 1756 was pur-
chased and joined with the Bären. Room 27 featuring an original wood-

Welcome to the “Engel” guest house
Tradition is very important to us, the owners of Hotel Engel in Sasbach-
walden. One of the reasons for this is that our hotel and restaurant
forms part of a cluster of listed buildings situated at the very heart of
the Ortenau region in the flower and wine village of Sasbachwalden.
The beautiful half-timbered façade testifies to the building’s history
dating back to 1764.
We offer personal service in our family-run hotel that looks back on
over 200 years of tradition. Son-in-law and head chef Christian Mamber
is responsible for our restaurant’s culinary signature, and treats guests
to hearty regional dishes as well as fine gourmet dishes that harmonise
perfectly with the excellent local wines.

Comfortable accommodation and personal service ensure the perfect
conditions for family celebrations, sociable get-togethers, and success-
ful corporate functions.
Find peace and relaxation afterwards in our modern, comfortable
rooms.
Countless popular day trip destinations await after a leisurely gourmet
breakfast, including the Black Forest, sunny Baden Wine Route, and
nearby Alsace.

Look forward to eventful days full of indul-
gence in fabulous surrounds amidst the
vineyards.

We look forward to welcoming you to Hotel
Engel!

Warm wishes from your hosts,
Herbert Decker and family,
Christine and Christian Mamber
and the entire “Engel” team. 29

Welcome to the Hotel Restaurant Lamm Rosswag in Vaihingen beside the River
Enz! Step into a hotel offering warm hospitality in which we work every day to
     pamper our guests.
We offer exquisite fresh regional cuisine with French and Mediterranean influ-
ences. We mostly work with products from the local region and even have an in-
house butcher. Guests to our restaurant additionally have the option of staying
in one of the 12 rooms in our little country hotel.
Our entire restaurant and kitchen underwent extensive renovation in 2009. A
wonderful terrace is also available from which stunning views can be enjoyed
over the steep vineyards in the Rosswager Halde winegrowing area, as well a
number of the old half-timbered houses in Rosswag.
Our culinary offerings are complemented by a first-class selection of regional
wines and premium German vintages, which meanwhile number over 300. Our

indulgence that we gladly wish to pass on to our guests to complement our var-
     ied dishes.
In 2012, our consistently outstanding cuisine and service led to our being award-
     ed a Michelin star.
