Artists: James Devereux and Louis Thomson
Starting in the industry at the age of 15, James Devereux
showed a natural talent for the craft and has been
working as a glass artist ever since. Specialising in
working with hot glass, he is adapt at working with solid
forms as well as blown pieces.
Louis Thompson is an artist with over 25 years
experience of working with glass. He completed his
Masters degree at the Royal College of Art in 2011 and
has been invited to work and teach with glass artists
both in the UK and abroad. Louis was the recipient of
two prestigious awards in 2012, the Jerwood Makers
Prize Commission and the Best Exhibit Prize at the
British Glass Biennale.

Umberto Pelizzari
Umberto Pelizzari is an Italian freediver, widely
considered among the best of all times. He’s the only
one to have established world records in all freediving
disciplines that existed at that time — Constant
Weight, Variable Weight, and No Limits.
He became famous for his rivalry with another top
freediver, Pipin Ferreras, originally a close training
friend. In No-Limits, Pelizzari and Ferreras pushed
each other deeper and deeper and became the focus of
the 2001 IMAX production Ocean Men.
He’s also taught, worked on television shows, created
Apnea Academy, and co-authored the widely used
Manual of Freediving.

Weingut Wittmann Wine Dinner
The Wittmanns and their ancestors have been wine-
growers in the old market town of Westhofen, in
southern Rheinhessen, where the first documented
of viticulture in the family dates from 1663. Today’s
estate developed from this long tradition over the
course of centuries.
Since 1990, Wittmann has cultivated the vineyards
according to controlled ecological guidelines, and
since 2004, their vineyards are biodynamic.

Chef: Thitid Tassanakajohn (Chef Ton)
Chef Ton (Khun Thitid Tassanakajohn), is the chef
and owner of Le Du Restaurant in Bangkok, an
“Asia’s top 50 Restaurant” specialised in serving
modern, Thai-inspired cuisine with a seasonal menu
rotation. He is also the chef and owner of Baan (Bib
Gourmand, Michelin Guide Bangkok 2018). Chef Ton
was a top-score graduate at the Culinary Institute of
America. From there he went on to work in several
Michelin-starred restaurants in New York, including
Eleven Madison Park, The Modern and Jean Georges.

Alice Yuen
Alice Yuen is an experienced holistic healer from
Hong Kong. She is a registered Physiotherapist
and has also been practicing Acupuncture for over
15 years. Drawing upon her broad spectrum of

offers a ‘whole body and mind’ treatment approach.

Chef: Michael Wignall
Michael was formerly at Gidleigh Park, UK, where he
achieved two Michelin stars and five AA rosettes. He
headed up the Old Beams restaurant, Staffordshire,
Waldo’s Restaurant in Cliveden Hotel, Michael’s Nook
and the Burlington Restaurant at The Devonshire
Arms, earning a Michelin star at each. Under
Michael’s leadership, The Latymer became one of the
top restaurants in the country. It was awarded its first
Michelin star and gained five AA rosettes in 2011 and
added the second Michelin star in 2012.

Tennis Coach: David Estruch
It is our pleasure to announce that David Estruch
Mañό, a tennis professional from Spain, will be visiting
Soneva Fushi from February 20 to April 6. David has
been playing professional tennis for 14 years, during
which he earned a national ranking of 31 in 2012. From
2013 onwards he took up tennis coaching and has
trained with tennis stars such as David Ferrer, Marat
Safin, Sara Errani and Anabel Medina, to name a few.
During his time at Soneva Fushi, David will be on hand
to coach, instruct, and play together with our guests to
improve their skills in tennis. Please contact your Ms./

Chef: Mark Lundgaard
Mark Lundgaard is the Chef and Director at the one
Michelin-starred Kong Hans Kælder Restaurant,
located in the oldest building in Copenhagen. In
Mark’s universe, food is not a gift sent down from
heaven. In order to understand the taste and the
composition of a dish, it is essential to respect its
origin and understand the craftsmanship in its
preparation. With a distinctive mix of classic French
cuisine and new Nordic kitchen, Mark creates dishes
that define palatability at its best.

Chocolate warmed by the sun. The glow of molten glass
fresh from the furnace. Soneva Fushi welcomes one of
the founding members of the American Studio Glass
movement, Paul Martoni and Richard Meitner - whose
work was exhibited at the Musee des Arts Decoratifs
in Paris - to the Glass Studio. Don’t miss the culinary
skills of the 3-starred Michelin Chef Gyoten, of Sushi
Gyoten fame in Japan. Chef Claus Meyer, the co-
founder of the two Michelin-starred restaurant Noma
in Copenhagen, of Bolivia’s best restaurant GUSTU
and of 1-starred Michelin Agern and Great Northern
Food Hall in New York City; as well as visiting chefs
from Italy and China also gracing the kitchens.
Wine tastings, the enigmatic French band Phly
Boyz, the award-winning astronomer Lars Lindberg
Christensen, American glass artists, and practitioners
specialised in Ayurvedic medicine, massage and
physiotherapy are all on-site this month.

Chef: Thomas Rode Andersen
From the beginning of his career Chef Thomas has
sought to dissolve the pretensions surrounding
gourmet dining, creating instead a relaxed ambience
for his guests to enjoy his fresh and delectable menus.
Chef Thomas’s passion for a healthy and active lifestyle
has led to his recent creation of Paleo Fast Food, in
Copenhagen – a nutritional diet plan based on the
‘hunter gatherer’ premise that human health and well-
being is one that resembles our basic ancestral diet,
that of fish, meats, vegetables, fruit, roots, and nuts.
Chef Thomas will be visiting us with his wife Thilde
Maarbjerg who is a renowned Sommelier.

Vinod Narayanan
Vinod comes from Kerala, India the home of
Ayurvedic medicine. After obtaining his Diploma
in Ayurvedic Healthcare Practice and Panchakarma
in India, he then travelled to Germany and Holland
where he helped develop Ayurvedic centres and train
therapists in Ayurvedic treatments. He also specialises
in natural healing and nutrition. He is a health and
fitness coach and also conducts Laughter Yoga, Aerial
Yoga and Pranayama classes.

Chateau Lagrange
Located entirely within the appellation of Saint-Julien,
the vineyard stretches in a single block over two North-
South rises of Gunzian gravelly soil. In parts large and
coarse and in others finer, this gravel is combined with
sand or iron-rich clay depending on the plot. With an
altitude of 24 metres, the centre of the domain marks
the highest point of Saint-Julien.
The estate covers 182 hectares (450 acres), of which
118 hectares (292 acres) are under vine.

Chefs: Lu Yao & Wu Wen
Chef Lu Yao is the Chinese Executive Chef of Relais &
Chateaux Yihe Mansions, a luxury 26 villa hotel in
Nanjing in China. He has displayed his mastery of
Chinese cuisine at banquet receptions, cooking for top
dignitaries including Chinese President Xi Jinping,
Premier Li Keqiang and former President Jiang
Zemin. Chef Lu Yao will be coming to Soneva Fushi
with his Assistant Chef Wu Wen.

Artists: Paul Marioni and Richard Meitner
A founding member of the American Studio Glass movement, Paul
Marioni is an internationally recognized artist known for his ingenuity
and his willingness to push the traditional limits of art. He is the
winner of the Glass Art Society “Lifetime Achievement Award” and a
three time recipient of a National Endowment for the Arts Fellowship.
Richard Meitner is originally from the U.S but moved to the
Netherlands in his early years and is now based from Amsterdam.
His work changes constantly, he can be quite easily counted as among
the most eclectic of all artists working in glass internationally. A
retrospective show of his work was held in 1981 at the Musee des Arts
Decoratifs in Paris and museums have devoted solo shows to his work
in, among other places, the Corning Museum of Glass and the Tacoma
Museum of Glass in the U.S.

Sandra Laznik
Sandra is globally appreciated and well-known for
mixing scientific researches with spirituality like a
pro. She’s academic in physical education, sports
massage and sports coaching, yoga teacher and a
facilitator of women’s tao courses. She will be offering
customised yoga sessions, show you how to train and
lift muscles on your face and help you clear digestion
with abdominal detox massage.

Chef Massimiliano Mascia
Massimiliano works alongside his grandparents Natale and Valentino,
concentrating on the organisation and management of the San
Domenico kitchens. Chef Max began working at just 14 years old: for
five years while attending high school, he attended classes and worked
in the kitchens. After earning his diploma, he decided to travel to
broaden his knowledge of raw materials, techniques, and flavours.
Chef Max’s career includes working in Italy at Ristorante Vissani and
at Ristorante Romano in Viareggio, in the United States at Osteria
Fiamma in New York, and in France first at the Bastide Saint Antoine
and finally in Paris at the multistar court of Alain Ducasse at the
Plaza Athené. Today at the age of 30, Massimiliano represents the new
generation of the restaurant and is also a symbol of the continuous
tradition to innovate and renew while conserving his solid roots in
Italian gastronomic tradition.

Chef: Kenji Gyoten
Chef Kenji Gyoten was born in 1982 and influenced
by his grandfather, a sushi chef, and encouraged
to become a sushi chef himself. After working
underneath his mentors in Tokyo, the chef opened
‘Sushi Gyoten’ in Fukuoka at his age of 26, and since
that time has received three Michelin stars in three
consecutive years since 2014. He is the youngest three
Michelin starred chef in Japan.

Phly Boyz
Relax and unwind to the soulful sounds of the Phly
Boyz, an acoustic, male vocal group originally from
France. From humble origins as a group of street
performers, the Phly Boyz have evolved into an
international party band that has appeared in over
30 countries. With an expanding repertoire of songs
from the 1920s to now, the Phly Boyz deeply engage
audiences from all eras and nationalities.

Lars Lindberg Christensen
Lars is an award-winning astronomer and science
communicator who will be at Soneva Fushi to teach our guests
about the night sky. He has authored a dozen popular science
books and directed several documentaries and planetarium
movies that have received critical acclaim around the world. He
is responsible for the communication from some of the world’s
largest and most famous telescopes such as the Hubble Space
Telescope (for ESA), the Extremely Large Telescope, the Very Large
Telescope, ALMA and La Silla. Lars has more than 200 publications
to his credit, most of them in popular science communication and
its theory. Lars received the Tycho Brahe Medal in 2005 for his
achievements in science communication.

Writer: Andrew Roberts
Andrew Roberts, a Fellow of the Royal Historical
Society and Fellow of the Royal Society of Literature,
is a British historian and journalist. He is a Visiting
Professor at the Department of War Studies,
King’s College London and a Lehrman Institute
Distinguished Lecturer at the New York Historical
Society. Roberts himself is best known for his 2009
non-fiction work The Storm of War. The book has
received awards such as the British Army Military
Book of the Year Award for 2010. During his stay, he
will be holding talks and book clubs for our guests.

Chateau Calon Segur
Calon Ségur is located on the border of the beautiful
village of St-Estèphe and is situated on 55 hectares
of land surrounded by an old stone wall. The château
is rooted in the vineyards. The entire estate holds a
romantic, quiet, and peaceful atmosphere. Marquis de
Ségur – one of the former owners and the so called
“Prince of the Vineyard” – loved the château so much that
he designed the label showing the château in a heart.

Chef - Dmitry Shurashov
Chef Dmitry is one of the most popular chefs in Moscow, famous for his
modern view on Russian cuisine. He does not only cook Russian food,
but he also creates dishes with a pan-asian influence and always adapts
the menu to requirements and products available on-site. Chef Dmitry
Shurashov’s restaurants have twice been featured in The World’s 100 Best
Restaurants list. He is also the Bocuse d’Or Russia judge approved by the
Bocuse d’Or Committee (Lyon, France). Chef Dmitry is one of the official
chefs of the state program of Rossotrudnichestvo (Federal Agency of the
Ministry of foreign affairs of Russian Federation) promoting modern
Russian cuisine around the world. Throughout his career he has opened
more than 25 restaurants, some of which include Chaika (included in
The World’s Best restaurants list), gastrobar ‘Nikuda ne Edem’ (the most

Chef - Prateek Sadhu
Born in Kashmir in 1986, Prateek Sadhu grew up around farms.
Naturally curious and always driven, he could be found in the kitchen
by his 10th birthday and over the coming years spent most of his free
time there, learning the basics with his mother and aunt.
He studied at the Culinary Institute of America, graduating with
double gold medals to his credit. He worked in some of the world’s
finest kitchens, including Alinea, The French Laundry, Bourbon Steak
(Washington DC), and Le Bernardin, followed by a tour of some
of Europe’s Michelin-starred restaurants. But it wasn’t until his
tenure under Rene Redzepi at Noma that Prateek really imbibed the
learnings of how to cook from the region and harness the soil. This
food philosophy changed his life. He later moved back to work at The
Pierre Hotel in New York, followed by a return to India as Sous Chef
at Le Cirque, Bangalore. Sadhu’s style and technique have developed to
reflect a holistic, true-to-the-earth cooking.

An Indian fashion designer based in New Delhi. In early 2011, he was
appointed creative director of the womenswear collection of the French
fashion house Paco Rabanne, although he left the company in May 2012.
Born and brought up in Mumbai, Manish was studying to graduate in
Commerce, when he decided to change his career path and applied for the
National Institute of Fashion Technology in New Delhi. He graduated in
1994 after winning the Best Student Award.

Chef - Tim Butler
Tim Butler is the Head Chef at Eat Me, a fine dining restaurant in Bangkok.
Born in Portland, Maine, Chef Tim Butler lived in New York City and
Southern California before moving to Bangkok in 2009 and joining Eat Me
in 2010 as Executive Chef, where he evolved the cuisine into the modern,
Asian-influenced, international comfort food that has won the restaurant
awards. Chef Tim’s industry experiences goes way back to his first job as
a fourteen-year-old as a dishwasher in a small Italian restaurant. A 1998
graduate of the esteemed Culinary Institute of America, Tim was made
Executive Pastry Chef of Aquavit in New York City under Chef Marcus
Sammuelson at the ripe old age of 21, and in 2007 was named New York
Rising Star Chef. Highlights of Chef Tim’s career include opening the
acclaimed Los Angeles restaurant Providence with Chef Michael Cimarusti,
working as a pastry chef at Bernardus Lodge in his hometown Carmel, and
working at Restaurant Daniel under Chef Daniel Bouloud in New York. Tim
has been a chocolatier, written recipes for countless cookbooks, run his own
catering company, and continues to provide restaurant consultancy services
when he’s not in the kitchen at Eat Me.

Playwright and Poet: Isley Lynn
Isley is a playwright and poet whose work has been
staged internationally, including at the Royal Court
Theatre and National Theatre London. Isley’s most
recent play Skin A Cat was awarded Pick Of The
Year at Vault Festival 2016 and nominated for four
Off West End Awards, including Most Promising
New Playwright and Best New Play - it will tour the
UK in autumn 2018. Isley is a visiting lecturer at
Royal Holloway University and is currently under
commission across theatre, television, and film
projects. While at Soneva Fushi she’ll be hosting
creativity and creative writing workshops for adults
and teens, and one for children, as well as readings
from Pyrard’s Journal.

Kiko Moya is the chef of L’Escaletta, located in
Alicante, Spain, and has been awarded two Michelin
stars. His father was the co-founder and previous chef
in the same restaurant. He first joined his family in

Bulli and El Celler de Can Roca.
The menu offers gourmet travellers dishes full of

Thomas Johansson
Thomas’ tennis career began at the age of five, and in
1989 he became the European 14s singles champion.
He finished at number 10 in the 1993 world junior
rankings, before going on to turn pro in 1994. He
went on to win nine top-level singles titles and one
doubles title, including his win at the 2002 Australian
Open where he beat Marat Safin in the final. Thomas
Johansson’s career reached its pinnacle with an
Association of Tennis Professionals (ATP) world
number 7 singles ranking on May 10, 2002.
He has also won the ATP Masters Series at the 1999
Canadian Masters and a silver medal in the men’s
doubles at the 2008 Summer Olympics, where his
partner was Simon Aspelin.

Gert De Mangeleer co-runs Hertog Jan with his

Focusing on the ways flavours, structures and

Chef - Edwin Vinke
Edwin Vinke has been the Patron of Cuisine at
Restaurant De Kromme Watergang in Hoofdplaat
for the past 23 years. The two Michelin-starred
restaurant tells the story of the passionate love of a
chef for his native land, as well as his relentless quest
for healthy food. In 2005 Vinke received his first
Michelin star, with the second one being earned in
2011. In 2008, he was presented with the title SVH
Master Chef, and Gault&Millau named him ‘Chef of
the Year’ in 2011. Edwin Vinke has been a member of
Les Patrons Cuisiniers since 2005.

Chef - Andre Van Doorn
Master Chef Andre van Doorn grew up in a family
of eleven children in the Utrecht municipality
Houten. He began his culinary career under Alain
Senderens’ star affair L’Arche Strate in Paris, where
he progresses up the ranks to several senior positions.
After this time, he served as the Head of Cuisine
at the Heemstede Castle, where he worked for a
few months for Queen Beatrix. In that capacity, he
was responsible for preparing the lunch during the
wedding of Prince Willem-Alexander and Maxima.
After only one year of opening the Restaurant Kasteel
Heemstede, he received a Michelin Star. André van
Doorn has been a member of Les Patrons Cuisiniers
since 2003.

Ben Saunders is one of the world’s leading polar explorers, and a record-
breaking long-distance skier who has covered more than 7,000km (4,350
miles) on foot in the Polar Regions since 2001. His accomplishments
include leading The Scott Expedition, the longest human-powered polar
journey in history, and the first completion of the expedition that defeated
Captain Scott and Sir Ernest Shackleton, a 105-day round-trip from Ross
Island on the coast of Antarctica to the South Pole and back again.
Ben is the third person in history, and the first Briton, to ski solo and
unassisted to both the North and South Poles, and holds the record for the
longest solo Arctic journey by a Briton. He is a global brand ambassador
for Land Rover, an ambassador for the Prince’s Trust, a patron of British
Exploring, a fellow of the Royal Geographical Society, and an acclaimed
keynote speaker, described by TED (where he has spoken three times) as
‘A master storyteller‘.

Chef - Michael Hüsken
Chef Michael Hüsken heads up the kitchen team at Sophia’s restaurant
at Rocco Forte’s “The Charles Hotel”, Munich. He was chef in some
of Germany’s most well regarded restaurants, including the two one
Michelin-starred restaurants Luce d’Oro, Schloss Elmau, and Reisers
am Stein in Würzburg; as well he cooked for Lafer’s Stromburg,
Käfer’s, Acquarello, and Geisels Werneckhof.
Michael says: “I try to cook food which is spontaneous, individual and
personal. I want my guests to enjoy surprising and gastronomic food,
presented simply, and delivered with warm and easy hospitality. For
example, we do not only serve our guests the beef filet, found on most
menus, but also other tastier cuts of meat such as the shoulder, neck
or belly. And of course fresh and seasonal vegetables, herbs and spices
play a significant role.”

Chef - Pere Planaguma
Since May 2003 Pere Planagumà has been the manager and head chef
of the Restaurant Les Cols d’Olot, located in a Catalan farmhouse in
Spain. His cooking conveys much with few elements. When creating
the dishes, he likes to remove everything that he considers is not
essential, while not losing the essential poetry. He strives to offer
the most intimate and familiar but with an up-to-date language. He
emphasises on the most modest products; the nature and the landscape
are his source of inspiration, he likes to adapt the products of the
land and her environment and give them a different meaning; the
presentation of his dishes plays with the emptiness of the dish: the
tradition/avant-garde contrast. Chef Pere is a professor of cuisine and
cooking at Girona and Harvard universities, a Ferran Adria teacher of
Gastronomic Culture and Food Studies, and a published co-author of
the book New Catalan Cuisine.

As Chef de Cuisine of restaurant 44, Tim Raue
received his first Michelin star and was recognised
with 18 Gault&Millau points as well as the title “Chef
of the Year” in 2007. He was given one Michelin star
and 18 points in Gault&Millau for restaurant MA Tim
Raue. Restaurant Tim Raue is currently awarded with
two Michelin stars and 19 points in Gault&Millau and
takes 48th place on the list of “The World’s 50 Best
Restaurants”. Chef Tim Raue is also the only German
chef so far, who has been portrayed in the renowned
NETFLIX TV series Chefs Table.

biggest houses, work as closely as possible with local
products and the seasons, creativity with finess, a sense
of shared pleasure, so many talents that Ronan Kervarrec
puts to the service of the Hostellerie de Plaisance today.
In the end of June, 2016, Chef Ronan Kervarrec, 46
years, took up his post at the stoves of the Hostellerie de
Plaisance. He occupied since 2013, the post of executive
chef of the gourmet restaurant (where he continued to
make both his stars shine) and all the kitchens of the
Chateau de la Chèvre d’Or in the Èze-Village, between
Nice and Monaco, also a 5-star hotel, member of the
Relais and Chateaux and “Grandes Tables du Monde”.

Nuya’s yoga journey began in 2006 when she took her first ever yoga class and
soon after travelled to India to study in-depth self-practice. Since qualifying as an
instructor in 2014, she has now completed further qualifications in Aerial Yoga,
Acro Yoga, and Acroyoga Fit.
Her classes combine creative sequencing, a spirit of playfulness, and inspiration
to help her students deepen their practice, find harmony within themselves, and
thrive by nurturing their body, mind and soul through yoga. Nuya hopes that all
her students step off the mat feeling refreshed, nourished and balanced.
Nuya teaches Hatha Yoga to balance the mind and body, Vinyasa Yoga to increase
