Oysters, salted yellow bean and sesame dressing, daikon.
Panko coconut prawns with picled ginger mayo.
Entrée:
Red wine braised octopus salad withwild oregano poached chicken, apple, coriander, walnuts fresh bread rolls and butter.
Main:
Zaataar spiced barramundi, quinoa tabbouleh, pickled turnip.
Slow braised lamb, pearl couscous salad, preserved lime.
Roast beet n carrot salad, tahini yoghurt, romesco sauce.
Dessert:
Seasonal fruit “etonmess” with pomegranate molasses and pistachio.

Ballotine of organic chicken, stuffed with prosciutto and green olives, romesco sauce.
