TYROLEAN "KASPRESSKNÖDEL"
CHEESE DUMPLINGS
Serves 4
~ 300g cubed white bread
from the day before
~ 150g savoury cheese
~ 100ml milk
~ 4 eggs
~ 100g butter
~ 1 onion
~ Half a bunch of fresh parsley,
finely chopped
~ Salt, pepper, marjoram, nutmeg
Preparation method
~ Sweat the finely chopped onion in the butter.
~ Mix the bread cubes with the grated cheese
Once it has cooled down, add the onion.
Then add the milk, eggs and spices. Mix well
and leave to rest for a little.
~ Shape the mixture into dumplings and flat-
ten them with your hand.
~ Shallow-fry in a frying pan with plenty of oil
and butter until golden brown on both sides.
Serve with salad or in a clear soup.
