2.1           Welcome
We are delighted that you have chosen a quality product from AICHINGER GmbH with the latest tech-
nology.
This manual contains important information enabling you to fully utilize the technical and economic ben-
efits of the system.
It is aimed at persons assigned to operation, commissioning, maintenance, troubleshooting and disman-
tling of the ROG - ROLL’N’GRILL® and its components.
Please read the entire manual carefully – especially the Chapter “Safety” and follow the instructions
when working with the ROG - ROLL’N’GRILL®.

–   Improper installation, commissioning, operation and maintenance of the unit
–   Operation of the unit with defective components or components that have not been installed correctly
–   Failure to comply with instructions in the manual regarding transport, commissioning, operation,

3             Safety
The unit is a state-of-the-art piece of equipment that has been designed, manufactured and documented
according to the valid EU directives and in compliance with the associated harmonized standards. This
is certified in the Declaration of Conformity.
Nevertheless, its use may result in risks to the health and life of the user or third parties or in damage to
the unit and other property. The unit may only be used in a technically perfect condition and in awareness
of potential hazards.
Besides, the unit requires maintenance and servicing in accordance with this manual. Any changes that
occur on the unit have to be eliminated immediately by qualified personnel. This concerns in particular
changes that affect the safety of personnel and property.
As an operator, you must make sure that all safety and warning notices are understood and complied
with. Make sure that all persons working on or with the unit have read the entire manual and understood
it prior to commencing work.

3.1           Warnings
Preceding warnings
Warnings that refer to a certain section or part of this manual (e.g. all steps of an entire handling instruc-
tion) are given at the beginning of the respective part.
Integrated warnings
Warnings that refer to a part of a section only (e.g. only one step of a handling instruction) are given at
the relevant point of this section.

3.1.2          Meaning of signal words and symbols
The following signal words are used in this document:

The symbols for hazards, warnings, instructions and prohibitions that are used on the unit are depicted

3.2            Operator’s responsibility
The operator must ensure the safe operation of the unit and must strictly comply with the following stip-
ulations.
Children or persons with mental or physical impairments must not come into the vicinity of the unit, nor
must they perform any activities on the unit.
Safe operating condition of the unit
– Prevent access of unauthorized persons.
– Always keep the warning signs attached to the unit clearly legible.
– In case of damage, shut down the unit immediately till the damage has been repaired.
– Work on electrical systems and the control cabinet must be performed by technically trained person-
   nel only.
– Tests and inspections must be performed by authorized personnel and within the stipulated mainte-
   nance and servicing intervals only.
– Only use spare parts approved by the manufacturer.
– Local regulations regarding accident prevention must be complied with.
– Local regulations regarding environmental protection must be complied with.

Obligations towards personnel
The following prerequisites must be fulfilled to ensure the safe operation of the unit by the personnel:
– The personnel have the required qualification and receive the appropriate training.
– The personnel have been instructed in fundamental regulations for occupational safety and preven-
   tion of accidents.
– The personnel have been instructed in operational specifics and requirements.
– The personnel have read and understood the part of the manual relevant for their activities.
– The personnel have access to the manual at all times. Always keep the manual in the direct vicinity
   of the unit.
– The personnel are regularly instructed in the hazards that may occur when working with the unit.
– The personnel wear the appropriate protective gear.

3.3           Personnel requirements
Before commencing work, all persons assigned to work on the equipment undertake to observe the fun-
damental regulations for occupational safety and prevention of accidents.
Persons whose responsiveness is affected, e.g. by drugs, alcohol or medicines, must not work on the
unit.
Qualification
All persons assigned to perform operation or maintenance activities on the unit must have read and
understood the manual, especially the Chapters “Safety” and “Warnings”, with regard to the respective
activity prior to commencing work.
Insufficiently qualified personnel cannot properly assess the hazards associated with handling the unit
and therefore put themselves and other persons at risk.
Insufficiently qualified personnel must not stay in the danger zone of the unit.
Personal protective equipment
Personal protective equipment serves the purpose of protecting people. Observe the applicable regula-
tions for the surrounding area and wear the prescribed protective gear.

3.4           Illegible labeling
Over time, labels and signs can become dirty or otherwise difficult to recognize. This can result in a fail-
ure to recognize the risks, and follow the required operating instructions. In order to prevent injuries, all
warnings must always be kept clearly legible. Damaged signs or labels must be replaced immediately.

3.5           Intended use
The ROG - ROLL’N’GRILL® is used exclusively for grilling solid food products, such as meat, fish with
firm flesh, vegetables or veggie burgers.
The slice thickness must be at least 9 mm and must not exceed 13 mm.
Meat must be boneless and without gristle.
Operation is only allowed in the ambient conditions specified in Chapter "3.7 Ambient
conditions" [ Page 10]. All attachments described in Chapter "4.2.1 Design of the unit" [ Page 14]
must be properly mounted at the unit.
The unit is meant for commercial use, e.g. in the kitchens of restaurants, canteens, hospitals, and in com-
mercial enterprises, such as bakeries, butcher’s shops and the like, but not for the continuous large-
scale production of food products.

Any use deviating from or going beyond the intended use is considered improper and is therefore not
allowed.
The unit is a state-of-the-art piece of equipment that has been manufactured according to the acknowl-
edged safety regulations and is therefore safe to operate.

3.6           Foreseeable misuse
The unit is not suited for processing food that can become liquid through heat. Meat must contain neither
bone nor gristle. Food products with an artificial envelope or packaging must not be used for grilling.
Use the unit only as described in Chapter "3.5 Intended use" [ Page 9].

3.8           Danger zones
All areas at and near the unit with an increased degree of hazard are considered danger zones.
Work areas during maintenance can also be danger zones. To ensure your own safety, exercise caution
when working in these areas.

3.8.1         Thermal hazard

3.8.1.1       Grill rollers
Grill rollers become very hot during operation.
Please observe the following:
– Keep a sufficient distance from the grill rollers when inserting the food product to be grilled.
– Prior to handling the grill rollers (e.g. for cleaning), observe sufficient cooling time and/or wear gloves.

3.8.1.2       Hot grilled products
Ready grilled products and the liquid oozing out of them are hot.
Please observe the following:
– Remove the grilled food very carefully.
– Use appropriate implements.

3.8.1.3       Fire and smoke development
Due to the operating temperature, greases and combustible materials can heat up and ignite.
Please observe the following:
– Clean the unit regularly.
– Exchange the grease filter regularly.
– Do not leave any combustible items, such as wipes or kitchen rolls, near the unit.

3.8.2         Mechanical hazards

3.8.2.1       Sharp edges
There is a risk of injury due to sharp edges of individual components.
Please observe the following:
– Wear work gloves.
– Observe cleaning instructions.

3.8.2.2       Rotating grill rollers
Parts of the body can get trapped and drawn in by the rotating grill rollers.
Please observe the following:
–   Do not touch the rotating grill rollers when inserting the food product to be grilled.
–   Tie up long hair.
–   Wear tight-fitting clothing.
–   Keep any objects away from the area of grill rollers.
–   Do not operate the unit without the covers (front and rear) and the supply grate.

3.8.2.3       Loss of stability
The unit can fall onto the floor during any phase of service life.
Please observe the following:
– Select the installation location according to the dimensions from the manual.
– Securely align the unit by means of adjustment screws on its feet.

3.8.3         Electrical hazards

3.8.3.1       Electric shock
Electric voltage may cause an electric shock.
Please observe the following:
–   Work on electrical wiring must be performed by specially trained electricians only.
–   Always observe the 5 safety rules when working on electrical systems.
–   Safeguard all supply lines and socket outlets in accordance with the electrical data.
–   Do not operate the unit with open terminal boxes or control panels.

3.8.3.2       Heat accumulation
Heat accumulation and dirt in the unit can lead to fire development.
Please observe the following:
– Clean the unit regularly.
– Keep ventilation openings clear.
– Hold carbon-dioxide extinguishers ready for fire-fighting measures.

3.8.3.3       Overcurrent
Excessive current flow in the event of a fault can lead to overheating of cables and consumables. Cables
and consumables can even catch fire.
Please observe the following:
– Safeguard all supply lines in accordance with the electrical data.
– Operate the unit via the residual-current circuit-breaker (RCD) ≤ 30 mA only.

3.8.4         Operating materials and substances

3.8.4.1       Aerosols and smoke
Inhalation of smoke and aerosols may cause irritations.
Please observe the following:
– Do not breathe in the fumes of burnt substances.
– Ensure sufficient supply of fresh air.
– Use approved, non-irritant cleaning and care agents only.

3.8.4.2       Hot grease
When grilling, hot liquids and grease can ooze from the food products.
Please observe the following:
– Ensure skin protection.
– Use appropriate implements to remove the grilled food products.

3.8.4.3       Biological and microbiological substances
Bacteria and viruses can provoke diseases and cause mold growth in the unit.
Please observe the following:
– Clean the unit regularly.
– Check and clean the installation compartment in the housing prior to repair.

3.8.5         Ergonomic hazards

3.8.5.1       Unfavorable physical strain
Working at an unsuitable height and excessive load can lead to unfavorable physical strain.
Please observe the following:
– Place the unit at an ergonomic working height.
– Use appropriate means of transport.
– Do not lift heavy loads alone.

Equipment overview

The product to be grilled is placed onto the supply grate and passed through the grill area automatically.
As soon as the food product to be grilled is ready, it falls onto the collection grate and can be removed
there.
The intensity of cooking is controlled exclusively by selecting the grilling speed levels via the control
panel.

4.2.2         Function
The grill is used for grilling solid food products, such as meat (boneless, without gristle), fish with firm
flesh, vegetables and veggie burgers.
The slice thickness of the food product to be grilled must be at least 9 mm and must not exceed 13 mm.
Trouble-free operation of the unit is only ensured under the surrounding conditions specified in Chapter
"3 Safety" [ Page 7].
Mount the functional components specified in Chapter "4.2.1 Design of the unit" [ Page 14] to ensure
intended use.

5             Transport, handling and storage
Improper transport of the unit can pose a threat to human health and cause material damage.

5.1           Unpacking
The unit is supplied ready-mounted in the original packaging. Remove the packaging completely prior to
setting up the unit.
Check the contents of delivery for completeness on the basis of the shipping documents.

5.2           Storage prior to commissioning
If the unit is not supposed to be used immediately after delivery, the following notes need to be observed
during temporary storage:
– Store the unit in a dry, well-ventilated area; do not store the unit outdoors.
– Do not remove or damage the original packaging.

5.3           Storage after decommissioning
If the unit needs to be stored after operation, thoroughly clean it first.

6             Assembly, installation and commissioning

6.1           Setting up the unit
Place the unit (approx. 40 kg) on a solid table or similar stable substructure at an ergonomic working
height. The unit is operated from the front.
The surface on which the product is set up must not be inclined by more than 5°. The surface required
to set up the unit is at least 800 mm x 400 mm.
The distance to other devices and surfaces must be 100 mm horizontally in all directions, and a clear
space of 600 mm has to be left above the unit.

6.2           Precleaning
The unit was precleaned after production in the factory.
It is nonetheless recommend that the unit should be cleaned to remove any residue left after production
or any dirt that has accumulated.
Use a damp, soft cotton cloth for this purpose.

6.3           Installation

                   WARNING!
                   Danger: Electric shock risk
                   Fault current can lead to severe injury or death.
                   •   Operate the device with a sufficiently dimensioned residual-current circuit-breaker
                       only.
                   •   Check the residual-current circuit-breaker regularly according to the manufacturer's
                       instructions.

The following activities must be carried out during commissioning:
1.) Check the installation of the unit.
2.) Operate the unit via the residual-current circuit-breaker (RCD) ≤ 30 mA only.
3.) Connect the unit to a 400-V CEE three-phase power socket.

Local regulations and valid provisions must be complied with.

7.1            Important functions

7.1.1          Stop grill rollers
1.) Press the Speed key for 3 seconds.

8.3           Burn-in
The grill rollers must be burned in before they are used. This procedure is necessary prior to commis-
sioning, every time after cleaning and every time before operation.

                   WARNING!

                   In the vicinity of the grill rollers, operation-related high temperatures occur on the
                   housing and the scraper sheets.
                   •   Exercise caution when working in the danger zone.
                   •   Place the food product to be grilled carefully onto the supply grate.

                   •   Wear tight-fitting clothing and do not wear jewelry.

6.) Within the first 2 to 3 minutes (grill rollers lukewarm), apply the ROG - ROLL’N’GRILL® emulsion
    onto all three grill rollers using kitchen paper.

7.) Wait for the burn-in time (approx. 5 to 10 minutes) to pass.
8.) Wipe off excess residue from the grill rollers with a clean kitchen paper.

9.) Put all parts back in place.
10.) Select the desired Speed key and wait for the heat-up phase to pass.
    When the suitable Speed control LED is lit, the unit is ready for operation.

8.5           Inserting the food product to be grilled
The grill rollers must be burned in before operation. (See Chapter "8.3 Burn-in" [ Page 22])
Note on the food product to be grilled:
– Meat must contain neither bone nor gristle. Remove bone and gristle first.
– Any food product to be grilled briefly is suitable (meat, fish with firm flesh, vegetables, veggie burgers,
   etc.).
– The slice thickness of the food product to be grilled must be 9 to 13 mm.
– The food product to be grilled can be seasoned before or after grilling.
– !NOTE: Seasoning before grilling requires more cleaning afterwards.

     cooled down completely.

the safe functioning of the unit.
Keeping the unit clean at all times reduces overall cleaning work and positively influences customers’
purchasing behavior.
Clean the unit daily using the ROG - ROLL’N’GRILL® cleaner.
Observe the instructions in the safety data sheets for your own protection.

                   Hot components must not be cooled down. Cold media such as ice or ice water can

 The last grilling operation has been completed and the food products to be grilled have been removed
  from the unit.
1.) Press the HEAT OFF key to start cleaning mode.
    The heating switches off.
    The grill rollers stop.
    The HEAT OFF control LED flashes fast.
    The cooling phase starts. It can differ depending on the ambient temperature.
2.) As soon as the HEAT OFF control LED starts flashing slowly, press the HEAT OFF key one more time.
    The grill rollers turn at their highest speed level.
    Coarse dirt is scraped off the grill rollers.
    The cooling phase continues.
3.) When the HEAT OFF control LED is continuously lit, cleaning can start.
!TIP: The grill rollers of the ROG - ROLL’N’GRILL® are easier to clean while they are still slightly warm.

!TIP: The grill rollers of the ROG - ROLL’N’GRILL® are easier to clean while they are still slightly warm.
1.) Remove coarse dirt from the grill rollers using commercially available, damp steel wool.

2.) Spray the ROG - ROLL’N’GRILL® cleaner onto the grill rollers.
    !CAUTION: Do not spray the ROG - ROLL’N’GRILL® cleaner onto the housing!

3.) Wipe down all surfaces treated with the spay using a sufficiently wet cloth to remove the cleaner with-
    out leaving any residue. When doing so, avoid water dripping onto the control panel.
4.) Always burn the grill rollers with the ROG - ROLL’N’GRILL® emulsion after cleaning, see Chapter
    "8.3 Burn-in" [ Page 22].

9.2.3         Collection pan and collection grate

13.1          Notes on caring for stainless steel

Possible causes of corrosion on stainless steel equipment
“Stainless steel” is the designation for specially corrosion-resistant and hygienic types of steel. These
types of steel have a chromium content of at least 10.5 % and in many cases contain additional ingredi-
ents, such as nickel and molybdenum.
The surface of this material is smooth and non-porous and meets the hygienic and microbiological spec-
ifications. Typical applications are: hospital equipment, canteen kitchens, facades and covers.
The non-corroding properties of stainless steel are due to a passive layer formed on the surface when
exposed to oxygen. The oxygen in the air is enough to repair the passive layer automatically if it has
been damaged or impaired due to mechanical impact.
Corrosive substances with a reducing effect (oxygen-consuming), such as substances containing hydro-
chloric or sulphuric acid, chlorides and spice concentrates, such as mustard, essences of vinegar, spice
blocks, table salt solutions, etc., can chemically disturb or damage the passive layer, depending on the
concentration and temperature, and therefore cause rust.
Moreover, stainless steel can be damaged by extraneous rust (from other components, tools, or flash
rust or abrasive dust or water containing iron). Surface phenomena, such as rust-like deposits, can occur
all over a surface or in spots or clusters.
Experience has shown that rust-like surface deposits can be caused by improper cleaning practice, for
example, use of cleaning agents containing hydrochloric acid (HCl). It only takes a small amount of res-
idue, which becomes more concentrated after cleaning due to condensation or evaporation, to cause
noticeable red deposits.
Where rubber seals are used, so-called crevice corrosion frequently also occurs. This means that, here
too, pockets of residual dampness are not dried or ventilated thoroughly, which can result in corrosion
due to the relatively low chloride content of the condensate or residues of cleaning agent.

Principles for working with stainless steel devices
The surface of stainless steel equipment must always be kept clean and open to the air.
– Stainless steel parts should only be treated with alkaline cleaning agents that contain small amounts
   of acid-free oil and not with acidic cleaning agents. Ingredients according to the manufacturer’s data
   in accordance with EU recommendations:
   less than 5 % non-ionic surfactants,
   more than 30 % aliphatic hydrocarbons.
– Do not use bleaching cleaning agents or cleaning agents that contain chlorine.
– Remove layers of lime scale, grease, starch, and protein regularly by cleaning. Corrosion can form
   under these layers due to lack of circulating air.
   Descaling can be performed with
   10 % acetic acid,
   10 % phosphoric acid, or
   with commercially available descaling agents.
– Parts made of stainless steel must not be in contact with concentrated acids, salts, spices, etc. for
   prolonged periods of time.
   Acid vapors that form during tile cleaning promote corrosion. Rinse contact surfaces with fresh water
   and wipe them dry.
– Fresh rust spots can be removed with mild scouring agents or fine abrasive paper. More stubborn rust
   spots can be washed with a warm 2 to 5 % oxalic acid solution.
   If these cleaning agents fail, treatment with 10 % nitric acid is recommended. Because of the hazards
   involved, this treatment must only be performed by technically trained personnel in accordance with
   current regulations.
